Food and Drink Paradise - Sugar Free Desserts Challenge!

Are you seeing for a new challenge? How about creating some easy and delicious dessert recipes for the special diet people? Some sugar free recipes ideas will be great. A project was given to a group of new students in an cooking class. Vanessa is the organiser for this project. She told the class to sit down and start a brainstorm practice over this topic.

After an hour, came a young lady with some breathtaking sugar free dessert recipes.

Desserts Food

"Class, stay quiet!" Vanessa said to the class. "Shall we see what she has created for us?"

Boiled Custard

Ingredients

250g dates
500 ml milk
1/8 teaspoon salt
Action
a. Cut the dates into small pieces.
b. Add milk and salt.
c. Cook it in a duplicate boiler for about 1 hour, till thick.
Coconut Pudding

Ingredients
200g desiccated coconut
250g dates
1 egg (well beaten)
500 ml milk
Action
a. Stone dates and fill a shallow pudding dish with alternate layer of coconut and dates.
b. Add egg and milk and pour this over the coconut and dates mixture.
c. Bake in 180°C oven for a nice brown.

Date Cream

Ingredients
500g whipped cream
250 ml milk
1 tablespoon gelatine
200g ground dates
Action
a. Soak gelatine in half of the milk.
b. Whip cream stiff.
c. Boil remaining milk and add gelatine.
d. Let cool, then beat till it begins to thicken.
e. Stir in whipped cream and mix well.
f. Pour into a mould and serve with whipped cream heaped around.

Food & Drink Paradise - Ice Cream Appreciation Class!

Imagine you are busy conducting an ice cream making class. All your retirement friends are invited to participate in the class. How wonderful! Do you have enough ice cream recipes?

Strawberry Sauce

Ingredients
500g strawberries (ripped
100g sugar
1 lemon (juiced)

Action

a Combine all and put them in a saucepan.
b. Mash them with the back of a big spoon.
c. Freeze it and get ready for use.

You may use this sauce for all ice-creams, fruits, and puddings.

Simple Ice Cream Mousses

Ingredients

800g sugar
10 eggs (500 ml)
10g Gelatin
2000g Fresh cream

Action

a. Place the eggs in a saucepan.
b. Set this saucepan in a bowl of hot water.
c. Add sugar in the eggs, and beat till fluffy like sponge.
d. When it is ready, remove from the hot water bowl, continue beating till cold.
e. In a saucepan, dissolve gelatin with a little warm water.
f. Place fresh cream in another saucepan, beat till fluffy.
g. Add gelatin and fresh cream into the cold eggs mixture, and mix well.
h. Squeeze this mixture through the bag into the molds.
i. Shake the molds slightly, and smooth the top with a spoon.
j. Freeze it.

You may top it with fruits, sauce, roasted nuts, raisins or even chocolate chips.

Food and Drink Paradise - Sugar Free Desserts Challenge!

Food & Drink Paradise - Candy Paradise

Removing stress with lemon candies and orange pudding! How about chewing some refreshing candies, smelling away with the lovely orange and lemon aroma everyday? What about creating some new and wonderful refreshing moments with all your family members and friends?

What about preparing some new candies and desserts for everyone?

Desserts Food

Are you ready? Let's go....

Candied Lemon Rind
Ingredients
8 lemons
1 teaspoon salt
200g sugar
125 ml water

Action
a. Remove the rinds from the lemon in quarters.
b. Cover with water and add salt.
c. Boil 30 minutes and drain it.
d. Add fresh water and boil until tender. About 30 minutes.
e. Drain and divide rinds into 2 equal portions.
f. Bring sugar and water to boil.
g. Add one portion of rinds, and boil until syrup is nearly absorbed.
h. Drain and roll in sugar. Cut with scissors into small pieces.
i. Repeat process for the remaining rinds.

Note: This made about 500g candied fruit.

Orange Pudding (6 servings)

Pudding Filings
Ingredients
500g cooked berries
Drained juice
1 tablespoon butter
300g brown sugar
1/4 teaspoon salt

Action
a. Drain the berries, and cook with the butter and
brown sugar for 10 minutes.
b. Add a little of the drained juice, when the berries get too thick.
c. Keep warm until used.

Pudding Batter
*Ingredients A
50 ml butter
100g sugar
1 egg (beaten)

Preparation
a. Cream the butter and sugar together. Mix in the egg.
b. Put aside to get ready.

-------------------

*Ingredients B
120g flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon grated orange rind
60 ml orange juice
2 drops of almond extract (optional)

Action
a. Sift flour, salt, and baking powder together. Add orange rinds.
b. Add this mixture to Ingredients A mixture, alternately with orange juice, and mix well.
c. Put the berries mixture into a buttered baking dish, and cover with the cake batter.
d. Bake in a 180°C oven for about 45 minutes, until the cake is golden brown.
e. Serve hot with whipped cream, flavor with almond extract, when desired.

Food & Drink Paradise-Desserts Paradise

Preparing an Indonesian layer cake is not too difficult. Although you see many ingredients involved. When you summaries it, you should be able to make it. No problem at all!

Are you ready?

Let's go......

Ingredients A
35g all purpose flour
1 tablespoon walnut (powdered)
1.5 teaspoon five spices powder
Preparation
Combine and sift all together.

Ingredients B
150g butter
40g cane sugar
65 ml sweet milk
Preparation
a. Melt the butter under room temperature.
b. Add sugar to the butter, and beat till fluffy.
c. Add milk and beat until creamy white.

Ingredients C
6 egg yolks
1/2 tablespoon rum
Preparation
a. Stir egg yolks into the B mixture, one at a time.
b. Lightly mix in rum.

Ingredients D
20g sugar
3 egg whites

Action
a. Beat egg whites, and sugar together until stiff.
b. Add this and the flour into the B mixture, and mix thoroughly.
c. Prepare 2 small square baking pan, grease them.
d. Place 2 tablespoons mixture into it, and bake in a 150°C oven, for 10 minutes.
e. Take out the baking pan, spread smoothly 1 tablespoon mixture on top of the cake.
f. Bake in 200°C upper heat oven, until browned.
g. Repeat this process till last second layer.
h. Adjust the oven to 150°C lower heat, and bake for 15 minutes.

Yes, it is ready! Please enjoy......

Note:a. You may make a bigger cake, by increasing the volume of the ingredients, when you are familiar with it. b. Some people will add cocoa powder into the ingredients, and they will have an extra aroma from it.

Food & Drink Paradise - One Step Ahead

A. Ingredients
