Cinco De Mayo Dessert Recipes

Like Thanksgiving, Cinco de Mayo is a holiday which many of us strongly associate with food, often more so than with the historical events behind the holiday. Naturally, with Cinco de Mayo, it is Mexican food which takes center stage on the table at holiday parties and other events; and while it often doesn't go beyond chips and salsa or guacamole at some parties, there are a lot of other choices available for cooks who want to add a more authentic touch to their 5th of May celebrations.

It is also pretty easy to make: without going into all of the details of the recipe, flan is a basic egg custard, which is baked "upside down" in ramekins to which a caramel has been added first, and then chilled before serving. Even though it is relatively easy to prepare, this is one of the most impressive of Cinco de Mayo dessert recipes.

Another Mexican dessert, which is certain to wow your Cinco de Mayo party guests, is pastel de tres leches (three milks cake). This is a rich tasting cake with a light and creamy texture; once you have tried it once, you will want to make it part of your regular dessert repertoire - it is just that good!

Other than the flour, eggs and sugar that you'll find in any other kind of cake, there are indeed three kinds of milk in pastel de tres leches, which is what makes it really special: condensed milk, heavy cream (or crema from a Mexican grocery if you have one nearby where you live) and unsweetened evaporated milk. Brandy is also in this recipe, adding to its exquisite flavor - and a whipped cream topping is, if you will forgive the pun, the icing on the cake.
