When it comes to great food one of the most overlooked aspect of the meal always seems to be, the fine desserts. There are so many wonderful sweets that can close a fantastic meal that it will be very difficult for you to actually settle on just one. The problem with this is that many of these sweets are just that, sweet. With divine cakes and decadent tarts and torts available on the back page of a fine menu, people often find themselves peeking prematurely just so they can get a sense of what is in store.

Good food can be found in many places today, yet it is the fine sweets at the end of this meal that are the most difficult for you to find. Not every restaurant is lucky enough to have their own pastry chef, so for this reason the ones that do have a distinct advantage.

If it is fine desserts that you are after, then you will need to keep in mind that they will not be found at home. You are going to need to go out, in order to taste what the great dessert chefs are offering for the evening. This is really nothing to someone that enjoys a good night out, and is always looking for the next big taste to come along. Good sweets are difficult to come by when you are dealing with many wonderful restaurants all vying to be the top dog on the block. What many of the owners fail to understand however, is that it is suppose to be the complete meal that sets the tone and that includes a solid dessert. If you are dining and you want to enjoy a nice cup of coffee after the meal, and the restaurant informs you that they are low on quality sweets this is definitely going to put a damper on the evening.

Try It All

In order for you to determine what is considered the king of the fine desserts, you are basically going to need to try them all. Try and get out and sample as much of these wonderful fares as you possibly can, and this will help you make an educated decision on what can be considered the best of the best. This may take a while as there are so many great eateries for you to explore, but you need to remind yourself that it is for the good of the dessert for there to be only one true king of sweets.

4th of July Desserts Suitable For Diabetics

July 4 is not only the birthday of our great country, it is also a day synonymous with the 5Fs; family, friends, fun, fireworks and food. And we diabetics don't want to be cheated on the food part of the celebration! Following, I have pulled together some great recipes that are suitable for diabetics and I believe, excellent dessert ideas for your Fourth of July celebrations.

AMERICANA PARFAITS

Desserts Food

1/2 cup fresh blueberries

1 cup fresh strawberries

1 small package strawberry-flavored sugar-free gelatin

3/4 cup boiling water

1/2 cup cold water

ice cubes

3/4 cup frozen sugar-free whipped topping, thawed

Wash fruit and pat dry on a paper towel; set aside. Reserve 3 strawberries with leaves still attached. Reserve 6 blueberries and set aside with the 3 strawberries. Get six parfait glasses and divide the remaining fruit evenly between them. Set aside.

In a medium mixing bowl, stir boiling water into gelatin. Stir at least two minutes to dissolve gelatin completely. Put cold water in a two-cup measuring cup and add ice cubes to make 1 1/4 cups. Add to the gelatin and stir until slightly thickened. Remove any remaining bits of the ice cubes. Pour out 3/4 cup of the gelatin and set aside. Pour the remaining gelatin evenly over the fruit in the six parfait glasses. Refrigerate 1 hour or until set but not firm. Using a wire whisk, stir whipped topping into the remaining gelatin until smooth. Spoon over gelatin in parfait glasses. Refrigerate 1 hour or until firm. Before serving, top half the glasses with the reserved strawberries and half with the reserved blueberries.

OREO COOKIE DESSERT

2 small pkgs sugar-free instant vanilla pudding mix

3 cups low-fat milk

8-oz light cream cheese, softened

8-oz carton frozen sugar-free whipped topping, thawed

16 Oreo sugar-free cookies, broken into pieces

Mix together pudding mix and milk on low speed of electric mixer; add cream cheese and mix until well blended. Add whipped topping and mix well with a large spoon (do not use mixer). Add cookie pieces and mix in. Chill for several hours or overnight before serving.

SUNSHINE CUPS

3/4 cup boiling water

1 small pkg sugar-free orange gelatin

1/2 cup cold orange juice

1/2 cup cold water

1/2 cup fresh raspberries

1 small can mandarin oranges, rinsed and drained

Put dry gelatin into a medium mixing bowl. Stir in boiling water and still at least two minutes until gelatin is completely dissolved. Stir in juice and cold water. Refrigerate approximately 1 1/2 hours until thickened to the point that a spoon drawn through the mixture leaves a definite impression.

Take 3/4 cup of the thickened mixture out and set aside. Stir raspberries and orange segments into the remaining gelatin mixture. Pour into 6 serving dishes or into 1 larger bowl. Beat the reserved gelatin on high speed of electric mixer until fluffy and approximately doubled in volume. Spoon over gelatin. Refrigerate at least 3 hours until firm.

If you don't mind heating up the oven--I suggest doing this early in the day--try these apple dumplings. We all know Apple Pie is considered very American but why not show your family and friends how creative you are by changing things up a little and going with Apple Dumplings instead?

APPLE DUMPLINGS

2 cups self-rising flour

1/2 cup shortening

3/4 cup low-fat milk

5 cups chopped apples

1 cup Equal Sugar-Lite

1 tsp cinnamon

Preheat oven to 375 degrees. Cut flour into shortening as if making a pie crust. Add milk. Make into a dough and roll out into a rectangle. Add Equal and cinnamon to apples and mix together. Spread apple mixture over dough. Roll up jelly-roll style and cut into slices. Place into a baking pan and pour sauce over all. Bake 1 hour.

To make sauce: Bring to boiling:

2/3 cup butter, 1/2 cup sugar, 1 cup Splenda and 1 1/2 cups boiling water

NOTE: The sauce in this recipe uses 1/2 cup sugar. You can substitute 1/2 cup unsweetened applesauce or go with the sugar if you don't like the applesauce results. But be aware of this when fitting this recipe into your diet!

CHERRY DELIGHT

1 sugar-free angel food cake

1 pkg (8 oz) light cream cheese, softened

1 small pkg sugar-free instant vanilla pudding mix

1 tsp vanilla extract

3 tbsp Splenda

1 can lite cherry pie filling or no-sugar-added cherry pie filling

1 small carton sugar-free frozen whipped topping, thawed

1/3 cup chopped pecans, if desired for garnish

Tear cake into bite size pieces and lay on bottom of a 9x13-inch pan. Mix pudding according to package directions and refrigerate until set. Mix cream cheese, vanilla and Splenda into the pudding. Pour mixture over top of cake pieces. Spread pie filling over pudding mixture. Top with whipped topping. Sprinkle chopped pecans over the top. Refrigerate 1 hour before cutting to serve.

Eight Food Additives You Need to Stay Away From

As a result of the global population boom, a lot of food companies are now looking for new ways to preserve vegetables, fruits, meats, and other natural produce. However, these types of food usually contain huge amounts of sodium nitrate or sodium nitrite, two types of preservatives that are associated with the development of certain types of cancer.
5. Certain Food Colorings
In order to make food look more palatable, food colorings are added. There is really nothing wrong with food colorings, especially if they are natural based. However, based on animal clinical studies, there are some that were found to cause cancer in animals. The food colorings that you need to stay away from are Red 3 (which is used in candies, baked goods, and canned or bottled cherries), Yellow 6 (found in gelatin, sausages, candies, baked goods and beverages), Green 3 (which is used to dye beverages and candy), and Blue 1 and 2 (also used in candies, baked goods, beverages, and pet food).
6. White Sugar
Refined white sugar makes food taste sweet. However, it does not really have any nutritional value. White sugar is usually found in cereals, crackers, baked goods, sauces and other processed foods.
7. Olestra
Abdominal cramping, gas, and severe diarrhea are just some of the side effects caused by Olestra, a synthetic type of fat that can be found in certain brands of potato chips. Furthermore, this substance can also prevent the body from absorbing vitamins from vegetables, fruits and other fat-soluble carotenoids.
8. Aspartame
The rise in the number of people who are suffering from diabetes has brought about the popularity of sugar substitutes, such as Aspartame. This sweetener can be found in diet beverages, low-calorie desserts and other sweet goodies. Did you know that some of the hardest restaurant recipes to obtain are those for desserts? It's true.

The big chain restaurants spend time and money creating special "signature" dessert treats. In many cases they invest more in coming up with a new twist on a gooey double-fudge ice cream cake than they do in figuring out more ways to dress up their hamburgers. It just makes economic sense.

I'm grateful therefore to the many unsung heroes of the Internet who have done the detective work to discover the exact recipes used to create some of the most mouth-watering restaurant desserts in America--and who have shared them with the world.

If your favorite restaurant serves up an especially tempting dessert that you're just dying to get the recipe for, chances are you can find it on the Web. You just need to put your best search skills to work and be persistent. Someone out there has it--and has either posted it for free on some chat board or has put it into an inexpensive e-book along with other so-called top-secret recipes.

Candida Diet Friendly Desserts

Although the words diet and dessert aren't typically the best partners, it is possible to enjoy some sweet treats while sticking to a candida diet. It is true that sugar and white flour are still foods to avoid, but there are carefully crafted candida dessert recipes designed to keep your body on track, fighting off candida overgrowth.

Studies have shown that people tend to fail on overly restrictive diets because they cannot stick to the plans long term. It may be possible to muster up the will power to succeed for a couple of weeks or even a couple of months, but soon the cravings start calling and it is important to have healthy alternatives to satisfy your desire.

Frozen Chocolate Pudding Dessert

Mix a package of sugar-free instant chocolate pudding (4-serving size), 1.5 cups milk, and 1 cup whipping cream. Add a small amount of stevia to taste. Pour into a pan, cover and freeze for at least four hours. Remove from freezer approximately 1 hour prior to serving.

Berries and Cream

Select fresh or frozen berries and pour heavy whipping cream on top. Add a small amount of Stevia and vanilla extract to taste. If the berries are frozen the whipping cream will freeze, creating a delicious, ice cream-like dessert.

Just because you are living with a candida condition does not mean you can't enjoy a dessert from time to time. Treat yourself on special occasions and when a major craving calls and you will be less likely to binge on damaging processed, sugary desserts.

Low Carb Dessert Recipes

Go easy on desserts, even these low carb ones. If you are to control your weight you must also watch the quantity of the foods that you put in your body. If you eat more than you need the excess will be turned into fat.

Chocolate Torte

This king of desserts can be made a day ahead

Meringue Stacks

6 egg whites
½ tsp. cream of tartar
1/tsp. almond extract
1-½ cups Splenda
¼ cup slivered almonds

Preheat oven to 300 degrees F. Beat egg whites, cream of tartar and almond extract in a large mixing bowl until soft peaks form. Gradually add Splenda. Continue beating until stiff. Spray cookie sheets with Pam. Spread meringue in 3, 6-inch circles. Bake in preheated oven 25 minutes or until lightly browned. Remove from cookie sheets immediately. Cool. Place one layer on serving plate. Spread with 1/3 of filling. Continue until layers and filling are used. Sprinkle almonds over top. Refrigerate overnight.

Chocolate Cream Filling

½ cup Splenda
¼ cup unsweetened cocoa
½ tsp. vanilla
1-½ cups heavy cream
¼ cup cream de cacao

Combine Splenda, cocoa, vanilla and cream in a small mixing bowl. Beat until thick. Add cream de cacao. Beat until stiff. Spread in meringue layers.

10 servings
2.7 gms. carbs./serving

Flax Seed Pie Crust

Preheat oven to 350 degree F.
Spray 8 inch pie pan with vegetable spray (Pam)
1 cup flax seed
1 egg white
1/4 cup canola oil
Mix all ingredients together in a small bowl. Turn into oiled pie pan. Press evenly over the bottom and sides of the pan, Bake 8 minutes. Cool before filling. Fill with sugar-free pudding mix prepared with skim milk---or, fill with any thing that you would put in a graham cracker crust.

Servings 8-10
0 net g carb/serving

Note: Flax seeds have 1 gram carbohydrate for each tablespoon serving. However, that carb gram is in the form of fiber which can be substracted for the total carbs, leaving 0 net carbs.

Meringue Pie Crust

4 egg whites
½ tsp. cream of tartar
Dash of salt
1 tsp vanilla
1 cup Splenda

Preheat oven to 275 degrees F. Spray a 12 inch pie tin with Pam. Beat egg whites until foamy. Add cream of tartar, salt and vanilla. Beat until dissolved. Line pie tin with meringue. Keep it thick on the bottom and thin on the sides. Bake in preheated oven for 1 hour. Turn off heat. Allow to dry in oven another 15 minutes. While meringue in baking, prepare filling.

8-12 servings
trace carb/serving

Lemon Pie Filling

4 egg yolks
½ cup Splenda
1/8 tsp salt
2 tbs. lemon juice
2 cups heavy cream whipped

Beat egg yolks with Splenda, salt and lemon juice. Cook over low heat until mixture is thick. Stir constantly. Remove from heat. Add almond extract. Chill. Fold half of whipped cream into cooled filling. Pour into meringue shell. Top with remaining cream. Refrigerate overnight before serving.

8-12 servings
trace carb/serving

Peanut Butter Cookies

½ cup natural peanut butter
¾ cup heavy cream
½ cup chopped walnuts
2 tsp. vanilla
½ cup Splenda
2 tbs. soy flour
1 tsp. baking powder

Spray a cookie sheet with Pam. Mix all ingredients in bowl. Blend well. Drop on cookie sheet by teaspoonfuls. Bake for about 10 minutes at 375 degrees F.

40 cookies
1.2 gms. carbs

Quick and Easy Chocolate Pie

Try using other flavors of sugar-free instant puddings.

(If you are watching cholesterol or calories use skim milk. However skim milk will add carbs to the recipe.)

6 oz box of Jello sugar-free instant chocolate pudding
2 cups heavy cream or half-and-half

Classic Rich Dark Chocolate Pudding Plus 5 Fabulous Luscious Variations On A Theme!

What does: crying over spilled milk, cream rising to the top, proof in the pudding and food for thought have to do with life? Everything. We just can't get over talking about food, especially with reference to dessert foods. Cake, peaches, cherries, apples, pie and pudding seem to find their way into everyday conversation. And why not? We should have our cake and eat it too! What chocolate lover can resist the rich, delectable taste of a creamy chocolate pudding? I know I can't.

Historically, chocolate pudding is a variation on chocolate custard, with starch used as thickener rather than eggs. Early versions of the dish using both egg and flour can be found in the 1918 edition of Fannie Farmer's Boston Cooking School Cook Book and in the 1903 edition of Mary Harris Frazer's Kentucky Receipt Book. In the late 19th and early 20th century, chocolate pudding was thought of as an appropriate food for invalids or children as well as a dessert. It was not considered a health food in the modern sense of the term, but as a wholesome, high-calorie food for those with poor appetites due to ill-health. General Foods (Jell-O) introduced chocolate pudding mix in 1934 as "Walter Baker's Dessert". It was renamed "Jell-O Chocolate Pudding" in 1936. Ref: Wikipedia.

Chocolate pudding is a class of dessert with chocolate flavors. There are two main types: a boiled then chilled, texturally a custard set with starch, version common to North America while a steamed or baked, texturally similar to cake, version is popular in the primarily British Isles, Australia and New Zealand.

A silky-smooth and amazingly satisfying decadent rich dark chocolate pudding with 5 easy variations. I am sure there's more, you can come up with more of your own! A delicious chocolate pudding that is the only way to end a dinner for two, a celebration or a simple family mealtime. I know this will become a favourite stand-by for sure! You won't find this in Gourmet or Bon Appetite! This recipe is so full-proof, your 6 year old could make it!

Dark Chocolate Pudding

2 cups milk (any kind) ½ cup brown sugar (or white) 1 tbsp cocoa 1 1/2 tbsp unsalted butter, cut into bits 8 oz. 70% dark chocolate 1 tsp vanilla extract (pure) ¼ tsp salt 2 oz dark chocolate shavings 2 oz arrowroot powder or 2 tbsp cornstarch

Dark Chocolate Pudding: Pour 1½ cups milk into a medium saucepan and add sugar, cocoa, chocolate, vanilla and salt. Bring to a simmer and whisk until chocolate has melted and it's smooth. Meanwhile whisk the cornstarch into the remaining milk until it has dissolved. Slowly pour the cornstarch mixture into the chocolate mixture whisking well. Continue cooking over low heat, stirring constantly until the pudding has thickened. Take off heat and whisk in butter cubes until it becomes shiny. Then, pour into your choice of tall parfait glasses, ramekins or small bowls and refrigerate until set, about an hour. Serve plain or with vanilla ice cream or whipped cream.

HINT- Use cornstarch or arrowroot, but there is a slight variance in the smooth glossy texture and sheen that comes with using arrowroot powder.

Serves 4

VARIATION # 1 WHITE CHOCOLATE CREAM

1 cup 35% whipping cream ½ tsp vanilla extract 4 oz. white chocolate

Heat cream and white chocolate together in a small saucepan, just until chocolate has melted. Whisk smooth. Pour into a medium bowl and place in refrigerator until well chilled. Once cooled whip into soft peaks and dollop onto chocolate pudding and garnish with chocolate shavings. (Recipe above)

VARIATION # 2 - COCONUT CHOCOLATE PUDDING - Use 1 14 oz Coconut milk + 2 oz of water. Serve dusted with the coconut flakes previously toasted in a dry skillet.

VARIATION # 3 - ALMOND CHOCOLATE PUDDING - Replace milk with 2 cups unsweetened almond milk and almond extract instead of vanilla. Top with toasted slivered almonds previously toasted in a dry skillet.

VARIATION # 4 MEXICAN CHOCOLATE PUDDING - Replace dark chocolate with Mexican Chocolate (it can be used in traditional Mexican dishes like mole and it can be used in baking for an unusual flavour) Alternately, replace vanilla extract with 1/2 tsp cinnamon or cayenne. Kick it up yet another notch by adding 1 shot of Kahlua, Mexican coffee-flavored liqueur.

VARIATION # 5 - SPIKED CHOCOLATE PUDDING -Replace vanilla extract with Chocolate liquor or Tia Maria (Jamaican coffee liqueur) or Kahlua (Mexican coffee-flavored liqueur)

Fat Free Desserts Can Be Your Sweet Treats

Man has always liked sweet things. In times past they braved bee stings before they learnt to control the bees. Later came sugar from cane - so precious that in earlier times it was used more as a condiment is today, merely being sprinkled over food. In more recent times, beets, parsnips, carrots and other foods that are naturally sweet have all been used to provide that sugary flavour. Then, with modern dietetics we began to realise that eating lots of very sweet, fat heavy foods wasn't the best for the human body.

But we still like that little treat. Hence the popularity of low fat desserts.

Biscotti

1-1/2 cup yellow cornmeal
1-1/2 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
9 tablespoons low fat spread
3/4 cup sultanas
2 eggs, beaten
grated zest of 1 lemon or orange
1 teaspoon vanilla extract
2 tablespoons water

How many cookies you get will depend on how big you make them, but it averages at about 3 dozen. They keep well in an airtight container, but only if you don't let anyone know they are there.

Pre-heat oven to 325 F, 170 C, Gas 3. Mix together the cornmeal and flour and then rub in the spread until the mixture resembles bread crumbs. You could do this in a food processor, but you will have to transfer to a bowl before adding the fruit and zest. Beat in the eggs, vanilla and water. Divide the dough into three parts and make these into long log shapes, about 8 inches long and 2-3 inches across. Place these on a non-stick baking tray and bake for 20 minutes. Let them cool for a few minutes and then slice diagonally into ¾ inch pieces. Place these cut surface down back on baking trays. These are then baked further for 5 minutes, before turning over for a further 5 minutes. Let them cool on racks and then either eat the lot or store them in an air tight container.

Coffee Brownies

These are great served after a not too rich meal with some fresh fruit - mango pieces, strawberries and so on.

½ cup low fat spread
I cup of sugar
I egg plus another white
I teaspoon of vanilla or almond extract
11/4 cups of all purpose flour
level tablespoon of instant coffee powder ( not granules)
1/3 cup of sifted cocoa powder
1 teaspoon of baking powder
1/3 cup raisins or choc chips
Preheat oven to 350F, 180C, Gas 4

In a large bowl beat together the egg, egg white, low fat spread, sugar and flavoring. Sift together the dry ingredients - cocoa, flour, baking powder and coffee powder and then mix these into the egg mixture. Stir in the fruit or chocolate chips. Pour into a greased or non-stick baking pan - 9 inches by 9. Bake for 20 - 25 minutes until a fork inserted comes out clean. Turn out and cut into 25 pieces or fewer larger ones.

Strawberry and Rhubarb Cobbler Serves about 6 unless you all have seconds

I f you haven't tried the combination of strawberries and rhubarb then there is a taste sensation awaiting you.

For the filling

3/4 cup sugar
2 tablespoons all-purpose flour
1 teaspoon cinnamon (optional)
Finely grated orange zest or a teaspoon of marmalade
4 cups rhubarb, chopped
2 cups strawberries halved or sliced

For the Topping

1 cup of all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons low fat spread
2/3 cup low fat buttermilk or yoghurt

Preheat oven to 400 F, 200 C, Gas 6.

Filling - In bowl, combine the sugar, flour, cinnamon and orange zest or marmalade. Add rhubarb and strawberries; toss to mix. Spread mixture in an 8-cup shallow glass or ceramic baking dish and bake in for 10 minutes.

Topping - Combine the flour, sugar, baking powder, baking soda and salt. Rub in the low fat spread until mixture resembles bread crumbs. Stir in the buttermilk or yoghurt until a soft dough forms. Drop by spoonfuls in 6 evenly spaced mounds on hot fruit. Bake for 25 minutes, or until top is golden. Serve with low fat vanilla ice cream or fromage frais.

Mix well and drop by teaspoon on cookie sheet. Bake at 350 degrees

1 sq. unsweetened chocolate

1/3 c. butter

2 tbsp. artificial liquid sweetener

2 tbsp. vanilla

2 eggs

1 c. cake flour

1/2 tsp. salt

1 c. walnuts

Melt butter and chocolate in saucepan over low heat. Remove from
heat. Add sweetener, vanilla and eggs. Stir until well blended. Add
flour, salt, soda and mix well. Fold in chopped nuts and then pour into
a lightly floured and greased 9 inch square pan. Level batter and bake
at 325 degrees 20-25 minutes. Cut into squares when cooled.

Living with Diabetes doesn't have to rule your life and especially what you eat. You obviously need to watch what you consume and monitor your condition carefully. However, there are still plenty of fantastic recipes available that everybody can enjoy.

Wines with bitterness include Cabernet Sauvignon, Red Bordeaux, Red Zinfandel, and Merlot. These usually go well with steaks and roasts.
Sweet wines include Vovray, Asti Spumante, Chenin Blanc, or most German wines for whites and Lambrusco, Port, Sherry and Vermouth for reds. These usually go well with dessert or by themselves.

d. When it is ready, remove from the hot water bowl, continue beating till cold.
e. In a saucepan, dissolve gelatin with a little warm water.
f. Place fresh cream in another saucepan, beat till fluffy.
g. Add gelatin and fresh cream into the cold eggs mixture, and mix well.
h. Squeeze this mixture through the bag into the molds.
i. Shake the molds slightly, and smooth the top with a spoon.
j. Freeze it.

You may top it with fruits, sauce, roasted nuts, raisins or even chocolate chips.

How to Make Delicious Desserts Using Fresh Fruits - Dazzling Peach Trifle and Gelatin Banana Split

The only thing better than fresh fruits are desserts made with those same fresh fruits. Try these delicious fruit desserts to rave reviews from family and friends. Gelatin Banana Split Desserts use fresh strawberries, bananas, pineapple along with maraschino cherries. This is a great summertime dessert, although it is also perfect year-round. This makes a very pretty dessert for parties, even holidays. The Peach Trifle is not only a delicious dessert, it makes a gorgeous presentation. Both of these recipes have eye appeal.

GELATIN BANANA SPLIT DESSERT

Desserts Food

1 1/2 cups boiling water
1 pkg (8 serving size) strawberry OR cherry gelatin
2 cups cold water
1 pint vanilla ice cream, softened
frozen whipped topping, thawed
sliced bananas
sliced strawberries
pineapple chunks (if using canned, drain very well)
Chopped pecans
halved maraschino cherries, if desired

In a large bowl, place the dry gelatin and add the boiling water. Stir two minutes to be sure all the gelatin is dissolved. Stir in the cold water. Add the ice cream and stir until smooth. Pour into a serving bowl leaving room for the toppings later. Refrigerate at least 3 hours or until firm. Before serving, top with the fruits. Pile whipped topping in the center and sprinkle with chopped nuts. Top with some halved maraschino cherries, if desired.

DAZZLING PEACH TRIFLE

1 box (16-oz) Angel food cake mix
1 tbsp chopped crystallized ginger
1/4 cup confectioners' sugar, divided
3/4 cup peach preserves
1 quart peach slices
1 pint blueberries
1 tbsp lemon juice
2 cups heavy cream
1/2 cup prepared lemon curd

Preheat oven to 350 degrees. Prepare the cake batter by preparing the mix according to package directions then stir in the crystallized ginger. Line a jelly roll pan, 11 x 17-inches, with parchment paper. Pour batter into the pan. Bake at 350 degrees for 18 minutes or until a wooden toothpick inserted in the center comes out clean. Let cake cool for 10 minutes. Sprinkle 1 tablespoon of the confectioners' sugar and remove the parchment paper. Cut cake lengthwise into 3 equal pieces. Starting with the long side, tightly roll each piece in paper towel. Let cool completely. Unroll cakes and spread each piece with 1/4 cup of the peach preserves. Re-roll the cakes. Cut each roll into 12 slices.

In a bowl, combine the peach slices, blueberries, lemon juice, and 1 tablespoon confectioners' sugar; toss gently to coat.

In medium bowl of electric mixer, beat on high speed the heavy cream and remaining confectioners' sugar. Beat for 2 minutes or until stiff peaks form. Fold in the lemon curd.

To assemble: Place 12 cake slices, spiral side out, along bottom of trifle bowl. Arrange Arrange peach slices above each cake slice. Add another layer of cake spirals above peaches. Place remaining cake slices in the center of bowl. Spoon the blueberries around the cake slices and peaches. Top the berries with the whipped cream mixture. Add a couple of peach slices to the top along with a sprig of fresh mint as garnish, if desired.

Frozen Summer Peach Ice Cream Surprise Recipe:

Desserts Food

1 ½ Cups of crushed/crumbs vanilla wafers, divided

2 ½ Cups sliced fresh peaches, or frozen peaches if they are out of season. Fresh peaches work the very best!

½ Cup sugar

1 Tablespoons of fresh lemon juice

½ Tablespoon of a really good vanilla bean paste

1 Cup of softened Blue Bell Home-made Vanilla ice-cream if it is available, if not use a very good store brand in your area. If you have your own ice cream make you can make your own vanilla ice cream and use it if you prefer. This is an easy to make recipe, so we are using a store bought ice cream.

First you will spread half of the vanilla wafer crumbs in the bottom of an 8 or 9 inch baking dish. In a food processor or a blender you will add the peaches, sugar, lemon juice and the vanilla bean paste. You will run the blender or food processor for about a minute. You will stop the blender at least once to scrape down the sides to make sure you get all of the peaches and sugar blended until it is a smooth texture. You will then pour the peach and sugar mixture into a large bowl, and gently fold in ice-cream. You will then pour over crust and sprinkle any remaining cookie crumbs on top of the peach dessert. You will then cover with plastic wrap and freeze for about eight hours until good and frozen. When you are ready to serve this peach dessert you will then remove it from the freezer and let it sit at room temperature for at least 15 minutes before serving. You should be able to get about 8 servings from this dessert, and there should be eight happy people after trying this easy to make peach dessert.

Cold Dessert Recipes

Summer dessert recipes can be no-bake cheesecakes, trifles, or frozen pie recipes. With ingredients like ice cream, whipped cream, chocolate pudding, brownies and fresh fruit, there is a cold dessert recipe to suit everyone.

Frozen Strawberry Pie

Frozen Strawberry Yogurt Pie is sooo refreshing. You can make it days ahead or keep one in the freezer for spur of the moment entertaining.

1 Ready made graham cracker pie crust

2 (8 oz.) container strawberry yogurt

1 (12 oz.) frozen whipped topping, thawed 1 (10 oz.)

1 Cup of fresh strawberries cut up

Mix the yogurt, with 3 3/4 cupped whipped topping and cut up berries and put into the pie crust. Freeze for at least 2 hours. Take it out to thaw about 15 - 30 minutes before serving and garnish with fresh strawberries.

Ice Cream Pie Recipes

These pie recipes are easy and everyone likes them. You can vary them in any way that you like. Our favorite is Hot Fudge Ice Cream Pie:

Ingredients:

1. Oreo cookie crust - I always use a store bought one

2. Smuckers Hot Fudge Sauce

3. Vanilla Ice Cream (or your choose your favorite flavor)

4. Cool Whip

First warm the hot fudge sauce so that it is easy to pour out of the jar. Use half of it to cover the bottom of the pie crust.

Soften your ice cream so that you can spoon it over the hot fudge sauce into the pie crust.

Pour the other half of the hot fudge sauce over the ice cream

Spread a layer of Cool Whip over the hot fudge sauce.

Put in the freezer and bring it out 15- 30 minutes before it's time to serve.

4 cups fresh or frozen gooseberries 1 small orange 1 tbsp clear honey 1 cup half-fat cottage cheese
Method:
Top and tail gooseberries and place them in a pan. Finely grate the rind of the orange and squeeze out the juice; add both to the pan. Cover and cook gently, stirring occasionally, until the fruit is tender. Remove from the heat and stir in the honey. Purée the gooseberries with their juice in a blender or food processor until almost smooth Cool Press the cottage cheese through a sieve until smooth. Stir half the cooled gooseberry purée into the cheese. Spoon the cheese mixture into 4 serving glasses. Top each with gooseberry purée.A very important note here is that it must be fresh good berries. If you cannot find fresh gooseberries you can rather substitute any other kind of fresh fruit. It will be perfectly tasty with any available fresh fruit. Canned gooseberries are normally canned in a heavy syrup and you can think what that will do to the dish! No more healthy!

Healthy and Harmless Desserts

When most people think of the word dessert, they think about really rich, sweet, and fattening foods. We tend to think its okay to have something a little bit on the sweet and fattening side after a meal because one we deserve it because we ate all are vegetables; and two, how badly could it hurt having a super small portion of something rich and fattening. You'd be surprised at some of the desserts that exist out there today. Fancy little individually wrapped chocolates from special chocolate making companies are the prime suspects I'm talking about here. Some of these treats manage to make hundreds of calories into the smallest pieces of chocolate. Some of which are usually just one bite!

Now it doesn't really matter if you ate all your greens that day because if you spoil it all with a fancy little piece of chocolate with only 10 to 20 seconds of gratification, then what's the point? I think that most never even consider the possibility of healthy alternatives in the realm of desserts. How can that be possible? That pretty much defeats the purpose in it of itself. Well at least that's what most would say or gravitate toward thinking. I think dessert shouldn't be some tradition in most cultures to represent an excuse of some sort at all. It should be a rewarding after meal treat that can still stay within the confines of what is generally considered healthy.

How about some examples? There are many perfectly harmless low calorie desserts including fruit pies, yogurts, low fat/calorie ice creams, strawberry parfaits, rhubarb bread pudding, oat cookies, frozen yogurts, caramel apples, frozen raspberry pie, fruit smoothies, chocolate strawberry's, and the list goes on. So as you can see many desserts can be very flavorful and satisfying for those of you that have an undeniable sweet spot that needs to be acknowledged every now and then. I really wouldn't advise having any type of food recognized under the dessert category everyday though. If you constantly crave sweet deliciously flavor packed goodness, then maybe something like every other day. But be careful as to what it is that you're constantly consuming so you know for sure that it's okay to have almost regularly.

Some healthy desserts do tack on more calories than others. Maybe it would be a good idea to find a few that you really like. You not only know how, but have become accustomed to making and buying and know that they aren't that bad for you. Once you have that sorted out, stick to those desserts for as long as you can. Eventually if you do become tired of the same old after dinner treats, then try mixing it up again.

Now given my examples up top I hope you've recognized a certain trend or an ongoing theme with desserts. That's right you guessed it, fruit! Nature's candy is better than factory candy anyway. There's more to love, more juice, and just as much flavor. Anyway factory candy today can be costly only focusing on quantity, not quality. I don't know if you guys have noticed this but I have. Candy today has dramatically shrunk to then what it used to be. Also, not only have they gotten smaller, but the packaging or wrapping has also gotten bigger which contributes to the smaller size of the candy. Now I'm sure none of you that are trying to watch your weight are eating candy anyway, just trying to make a point to make natures candy look better. Overall, desserts today can be anywhere from naughty to nice. It's up to you to choose which category you place them under for your own personal indulgence.

Baked Chocolate Mousse

1 pound semisweet chocolate
6 tbs unsalted butter
1 c heavy cream
1/4 c Kahlua
6 large eggs, at room temp
1/2 cup sugar
1/2 tsp salt

Preheat oven to 325 and line a 9 inch springform with parchment paper.

Place the chocolate and butter in a microwave safe bowl and microwave until the chocolate is just about to melt. Stir until everything is melted and well combined. Set aside.

Whip the cream and Kahlua until you get stiff peaks, then refrigerate.

Whip the eggs, sugar and salt together in a large bowl. Once they are well combined, whip for 5 to 6 minutes at high speed. Don't overmix. Stop when you notice it starts to lose volume. Fold the chocolate mixture into the cream mixture using a spatula.

Pour the mouse into the spring form pan, then bake for about 1 hour. Allow it to cool completely.

Traditional wine pairings include fizzy or sparkling (the sparkling is more fun) Asti DOCG from the neighboring region of Piedmont, the nearby red or rose Malvasia di Casorzo d'Asti DOC available in a wide variety of styles, and the Tuscan white Moscadello di Montalcino DOC. You won't have trouble finding the Asti or probably the Moscadello. No promises for the Malvasia.

Desserts Food

Panettone is a classic Italian Christmas cake. The Lombardy version is said to be the best and the hardest to make. To do it right, use baker's yeast. Among the ingredients are egg yolks, melted butter, raisins (soak them and squeeze them dry), butter, and diced candied orange and lemon rinds. Italian bakeries should carry this delicacy at Christmas time. Suggested wine pairings include the red fizzy or sparkling Acqui/Brachetto d'Acqui DOCG from neighboring Piedmont (if you can find it), Asti, and Moscadello di Montalcino DOC.

Sbrisolona (Crumbly Cake) starts with white flour and cornmeal. Other ingredients include butter, white wine, chocolate, and candied cherries. As its name indicates, make sure the dough stays crumbly. Slice while hot so it doesn't break. Among the many recommended wine pairings try Colli Orientali del Friuli Picolit DOCG from the Friuli-Venezia Giula region of northeastern Italy, Vino Santo di Chianti Classico DOC from Tuscany, and the hard to find Ramandolo DOCG also from Friuli-Venezia Giula. In spite of what you might think from its name, Vino Santo di Chianti is often white.

Torrone (Nougat) is a delicious candy made from honey, sugar, egg whites, pistachios, almonds and some other goodies. This should be fairly easy to purchase. I'm told that Torrone keeps for a long time when wrapped in waxed paper or aluminum foil. Don't believe it. Enjoy with wine pairings such as Greco di Bianco DOC from Calabria, Moscato di Trani DOC from Apulia, or Vin Santo di Montepulciano DOC from Tuscany. This last wine may be white or red. At least the last two should be relatively easy to find.

Our final Lombardy dessert recommendation is Torta Paradiso (Angel Cake) said to be best in Pavia. You'll need potato starch, more egg yolks than egg whites, butter, and a few more ingredients. Serve the day after you make it. And what dessert wines should you serve? Suggested pairings include Loazzolo DOC from Piedmont, Malvasia di Cagliari DOC from Sardinia, and Recioto di Soave DOCG from Veneto. This last wine may be sparkling and whether or not it sparkles will probably cost more than the others. But it's a lot easier to find.
