Low Calorie Desserts - 4 Simple Ways to Create Desserts That Will Lighten Up Your Weight Loss Diet

Do you want to lose weight and still enjoy food? You can. Do you miss these nice desserts you used to have? The fact that you are on a diet does not mean you can't have them any more.

Did you know that having a dessert or sweet treat every once in a while actually increases your chances to lose weight successfully? Why? Because if you allow yourself this bit of luxury you can't do without, you are much less likely to cheat on your diet and then exaggerate it. There are four ways of reducing calories in your dessert:

Reducing fat
Most fat in your desserts comes in form of butter or dairy products like cream, milk, cream cheese and mascarpone. You can reduce fat very easily without losing much taste.
Replace butter with a good margarine. That's not only less fat but also healthier fat. In many cake or muffin recipes you could even use canola oil instead. If cream is not used beaten, you can use butter milk or coconut milk instead. They contain much less fat and also taste great. Use low fat milk instead of full cream milk. It works just as well and you will barely notice the difference. Plus, you cut calories coming from milk to about one third. Buttermilk can replace milk in shakes and smoothies. Use low fat smooth cottage cheese or ricotta in place of cream cheese or mascarpone. Your dessert will have significantly less calories and also be less heavy. Buy low fat ice cream. Try to find one that is not too high in sugar. Alternately, you can make your own ice cream with low fat milk and artificial sweeteners.
Reducing sugar
This is a bit more tricky but still possible. In many recipes you can simply reduce the amount of sugar. If you then feel it's not sweet enough, you have several options:
You can use artificial sweeteners like Splenda or Aspartame. They are very sweet (so a little will do) but contain almost no calories. You can also use natural sweeteners like honey, fructose or maple syrup. They contain fewer calories than sugar, and since they are much sweeter you need less. But remember that they still do contain calories. Natural sweeteners are a great option if you just want to sweeten something a little. But if you want to use a large amount, then rather don't go this route. Add naturally sweet foods like fresh or dried fruit to your dessert. This will reduce your need for additional sugar and at the same time provide you with many important vitamins and fiber.
Reducing other simple carbohydrates
Of all carbohydrates, sugar is the one that causes most damage. But there are other simple carbohydrates that have a quite similar effect on our body. Refined products like white flour also contain simple carbohydrates. These are stored as fat when you eat too many of them, so you should reduce these foods as well when you want to lose weight.

The best way to do this is to swap white flour with whole grain flour. You can completely replace it or mix the two, depending on how much you need or want to reduce calories. The good thing about a whole grain muffin is that it also fills you quicker and better than one made of white flour. So you will eat less.

Reducing portion sizes
One of the best and most effective ways of reducing calories is certainly simply eating less. I'm not saying you should have tiny portions. Just reasonable ones. You don't really need five scoops of ice-cream, two would also do. Rather stick to smaller portions and enjoy them without having to worry too much about the calories.

Quick Napoleon Dessert Recipes

A traditional Napoleon is a French dessert made from layers of puff pastry spread with a vanilla pastry cream. The top of the rectangle or triangular shaped sweet is drizzled with chocolate and or dusted with powdered sugar. Historians say that the Napoleon was created by a Danish royal chef in honor of a visit by a French emperor. And that Emperor Bonaparte's defeat at Waterloo was the result of an overindulgence of his now famous namesake pastry.

You may have a hard time distinguishing after eating a Napoleon what part is the best part. Is it the puff pastry or the pastry cream? I think all of the flavor combinations work very well together, so, I say all of it! This is a very quick and easy dessert recipe, and you will not spend all day in the kitchen. We are going to take the shortcut method and make it work for our recipe.

Making puff pastry from scratch is not an easy task to undertake. It is a labor and time intensive endeavor. Perfectly chilled ingredients, repeated rolling to the correct thickness, and precision folding are the keys to faultless puff pastry. Not to mention working in a kitchen that is not humid. The meticulous rolling and folding, along with the moisture in the butter, creates steam which causes the dough to puff and separate into the flaky layers that the pastry is known for. Some chef's recommend anywhere from thirty minutes to two hours chilling time between rolling and folding. Consider that the roll, fold and chill process is done four times, you need to block off two to eight hours to make puff pastry. Or, take a trip to the frozen food section of the grocery store and buy it.

Ready made puff pastry is available in sheets or shells. To thaw it at room temperature takes about thirty minutes, in the refrigerator about four hours. It will keep in the refrigerator up to two days. When shaping the dough, work with one sheet at a time, refrigerating remaining sheets until ready to use. As with all dough handle as little as possible. A pastry wheel, pizza cutter or sharp knife are the best utensils for cutting the dough. Cut edges should be crisp to keep the layers separate so that they puff during baking. Always bake puff pastry in a conventional oven and keep in mind that darker baking sheets cook faster.

Vanilla pastry cream is the standard filling for a Napoleon. This is a very short recipe for making quick Napoleons.

1 Package of frozen puff pastry dough

2 Packages of Vanilla instant pudding

1 Bottle of a good chocolate fudge or chocolate drizzle

3 Ounces of confectioners sugar

Prepare instant pudding according to package directions. While pudding is chilling follow directions for thawing, unfolding and baking puff pastry sheets. Cut into desired shape at bake at 400° for twelve minutes or until golden. Pay close attention to baking time, sheets burn easily. Let cool to room temperature.

To assemble you will place a layer of pastry in bottom of a sheet pan. You will then gently spread with a layer of pudding, then another layer of pastry. Repeat the layering process until ingredients are used up. You will then heat your chocolate fudge until it is at a pouring consistency. You will pour or drizzle over the tops of your Napoleons, and dust very lightly with the confectioners sugar. You will need a serrated knife to cut these into bars to sreve. Keep refrigerated until serving time.

If you want to substitute a low fat, or zero fat pudding in this recipe, there is still enough sugar to give it flavor with half or no fat in the pudding.

Tiramisu

- 1 pound of mascarpone cheese

- About 40 lady fingers

- 3 cups Italian coffee

- 6 eggs

- ¾ cup of Marsala wine

- 4 tablespoon of coca (power form)

Preparation:

Use an electric mixer to combine both the egg yolks and sugar until the mixture becomes light and fluffy. Save egg whites for use later in the recipe. Add mascarpone cheese and stir it in to this mixture as well. Once these three ingredients are well combined, now add the 6 egg whites. Add the 4 tablespoons of cocoa and mix it in as well. Once it is all mixed place half of the ingredients into a cake dish.

Dip lady fingers into Italian coffee and then place them on top of the mascarpone cream. Cover this up with more contents to create layers. You will want to create about two layers. Once you placed two layers of lady fingers in the cake dish spread with remaining cream. Sprinkle some cocoa powder on the top of the cream. Set the cake dish into the refrigerator for about 24 hours. Enjoy!

If this dessert is created for kids, sub the Marsala wine with just the coffee.

Coconut Balls Cookies

For those wanting a great dessert cookie to go with your Italian Coffee or supper, Coconut ball cookies are extremely flavorful and very easy to make. Below is the recipe.

Ingredients to Use:

- 3 large eggs

- About 3 cups of shredded coconut (packaged is fine)

- 3 cups of graham crackers

- 1.5 cups of sugar

- 1/3 cup of cocoa

Preparation:

To prepare this tasty Italian dessert recipe, combine together the butter and sugar in a large bowl. Make sure they are well blended. Add in your 3 eggs. It is best to add each egg in one at a time and stir well before adding the next in. Now add the 1/3 cup of cocoa, shredded coconut and graham crackers. Before adding the graham crackers make sure they are crushed. Mix all ingredients well and shape them into small balls. Once shaped, refrigerate for about 2 hours before serving. Many people also might want to add a little rum, generally a recipe such as the one we've listed requires about 1 to 3 tablespoons of rum.

How to Make Your Sugar Free Dessert Recipes Sweeter Than Ever

If there is ever one complaint that I heard about sugar free dessert recipes, it's that they aren't sweet enough.

There always seems to be some sort of compromise of taste when making these recipes (instead of ones with sugar), and for many people the eating experience just isn't the same.

Here are 3 different ways you can sweeten your sugar free recipes, while still using ingredients that are safe for diabetics and people with allergies.

Agave Nectar

Agave Nectar is a sugar substitute that comes from the "agave" cactus plant. It has a Glycemic index of 27-38 (depending on the brand). Anything less than 55 on the glycemic index is safe for diabetics. You can use Agave Nectar with a 1:1 ratio to sugar. This means that if a recipe calls for 1 cup of sugar, put in 1 cup of Agave Nectar).

When using Agave, you need to keep in mind that it is a syrup (similar to maple syrup), so certain recipes will react differently when using it (because there will be more liquid in the recipe). It is a good idea to try and compensate for this extra liquid in your recipes. Do this by removing other liquids (like vegetable oil), or by mixing Agave with another sugar substitute.

So what sugar substitute should you mix it with...?

Stevia

If you would like to mix Agave with another sweetener, then Stevia is the perfect option for you. Stevia comes from the Stevia Rebaudiana, a plant, and it can be up to 300 times sweeter than sugar. With that in mind, if you have a good brand of Stevia (I have a few recommendations I could share), you might only need of a teaspoon for every cup of sugar. Often I will mix Agave and Stevia together in my recipes. So if a recipe calls for 1 cup of sugar, I will instead put a cup (c) of Agave, and 1/8 of a teaspoon (tsp) of Stevia.

This helps to normalize the recipe a bit, instead of having all the extra liquid that agave offers.

One last sweetener you can use to make your sugar free dessert recipes sweeter is...

Erythritol

Erythritol is a sugar alcohol that comes naturally from certain fruits and vegetables. That being said, it's a natural sweetener that you should be aware of. Unlike other sugar alcohols (which can make you sick), Erythritol is completely safe for you to eat, and tastes pretty good too!

Using it in your recipes, you will need 30% more Erythritol than sugar. So if a recipe calls for 1 cup of sugar, you will need 1 1/3 of a cup of Erythritol. You should note that it does cause of a bit of a cooling sensation when cooking with Erythritol, so make sure that you give your oven a good 15 degree boost when baking with it.

With those things noted, you will find Erythritol to be a superb sugar substitute that is another must-have in your pantry.

Filipino Recipes - Binagol (Dessert) Recipe - Pinoy Food

Binagol, also called binangol, is a sweet delicacy originating from Leyte, an island in the Visayas. There are several versions of this recipe, some uses chocolate flavors and some with nuts and butter. This recipe is the simpler version, though.

The Taro root mixture is contained in polished coconut shells, thus the name binagol from the root word "bagol", a visayan term which literally means coconut shells. Because of the abundance of coconut trees in this tropical country, you will surely find many kinds of delicacies using coconuts as packaging. Cooking this recipe may be a tedious process but the finished product is worth the effort.

Desserts Food

Ingredients:

1 cup rich coconut milk (from 2 medium coconuts) ¾ cups raw gabi or Taro root (shredded) ¾ cup brown sugar ½ can full cream condensed milk 4 egg yolks wilted banana leaves 4 medium coconut shells (cleaned) string for tying

Cooking Instructions:

Combine shredded Taro root, coconut milk and brown sugar. Place in a thick-bottomed pan and cook over medium heat for about 6 minutes while stirring constantly. Reduce heat to low and go on cooking for 10 more minutes. Add the condensed milk and cook for another 20 minutes over low heat, stirring continuously. Fill the shells with the cooked mixture. In the center, make a well and drop 1 raw egg yolk for each. Cover top with the cooked Taro mixture and spread smoothly. Fill very close to the coconut shell's brim. Use two layers of the wilted banana leaves to cover the filled coconut shells and use the strings to tie securely. Steam for half an hour.

New Food Trend - Tiny Desserts Are Guilt Free

Americans are realizing that our food portions are out of control, but we like our dessert. A new food trend in many restaurants is the mini-dessert. The mini-dessert is served in tiny portions- each only a bite or two. Guests can have one or two guilt free or can try several that tempt them. This trend can be easily duplicated for your next party or event. The trick is to have a choice of small desserts with a variety of flavor choices.

The most challenging part of this food trend is finding suitable and attractive serving dishes. Consider those tiny crystal glasses that you've probably never used for puddings and pie fillings. Bar cookies and pie can be cut into small squares and alternated on a large platter. Have attractive dessert dishes nearby.

Here is a recipe to get you started:

Tiny Lemon Meringue Parfait

1 package store bought meringue cookies

1 package vanilla wafers, crumbled

Filling:

5 egg yolks

½ cup sugar

grated rind of 1 lemon

6 to 8 tablespoons lemon juice

1 ½ cups cream, whipped

Beat egg yolks until thick. Add sugar, lemon rind and juice. Cook in double boiler until thick. Cool and fold into the whipped cream until well mixed but still streaks of each exist. Into a small glass such as a small wine glass, place a layer of vanilla wafer crumbs. Put the filling mixture into a piping bag, or place in a ziplock bag and clip the corner. Use the bag to pipe the filling mixture onto the cookie crumbs. Refrigerate. At serving time, top each with a meringue cookie. The combination is like a single bite of lemon pie. You could use a similar presentation using key lime pie filling or even banana pudding. The idea is to give your guests just a bite of flavor. Ideally you will offer several choices of flavors or a mixture of small desserts. Guilt free!

Dessert for Diabetics - How To Make Good Low Carb Desserts

If you are diabetic, you may think that dessert is out of the question. But desert for diabetics exist. As you know, diabetics must limit their intake of sweet, but that does not mean you have to eliminate all sugar. You just need to make sure that you only eat sweet foods in moderation.

Eating high carbohydrate foods such as dessert should be done in the same meal protein and fiber to help balance your blood sugar. You also need to have just a small portion of sugar laden foods. Make sure that you limit the number of servings of dessert available if you are prone to eating too much sugar.

Excellent desserts can be made from fruit. Basing your dessert recipes on fresh fruits is an excellent way to create a lower carbohydrate dessert that is still delicious in addition to being more nutritious than most other desserts available. A smoothie is a great substitute for ice cream when it is made from whole fruit and ice cubes. Any fruit you like will work in a smoothie. You can also add milk for a better ice cream like feel. You can even sneak some vegetables into your smoothie by adding a carrot or even a few spinach leaves. You may want a high powered blender so that everything is as smooth as possible, but I can assure you from personal experience that a fruit and vegetable smoothie with plenty of ice is just as good as ice cream and much better for you.

An idea if you are diabetic and love chocolate, is to combine a small amount of sugar with cocoa powder and mix it with a banana for a substitute for chocolate pudding or chocolate mousse. The banana is more nutritious than any pudding you'll find, and also has fiber.

Dessert diabetics can be a challenge, but with some creativity you can adapt many regular desserts into diabetic friendly versions and be just as happy with the results.

Cacao, Raw Almonds and Raw Food Desserts

In this article, Ani Phyo shares on cacao, raw almonds and raw food desserts that "wow." Ani Phyo is a raw food chef extraordinaire and the author of Ani's Raw Food Kitchen and Ani's Raw Food Desserts.

Kevin: Julia asks, "What's your best dessert to wow cooked food people?" I love how she said "cooked-food people." I think it's kind of funny. Like us against them, right? I'm just kidding.

Desserts Food

Ani: [Laughs] The one that's been getting a lot of reaction from everyone in the press and the media is the chocolate raspberry ganache fudge cake. That's in my book. The cake, rather than a traditional ganache cake which is made from white flour, refined sugar, the cake is actually made of walnuts. So that's the dry powder. It's walnuts and cacao. Then it's bound together with medjool dates. Walnuts are touted as a superfood by the FDA, as is cacao, because walnuts are packed with omega-3s. Walnuts, as all nuts, have been found to lower cholesterol. It's really good for heart health. Omega-3s are really healthy for our skin. It also has vitamins A, C, D, E, all the vitamins that are really great. Nuts and seeds all have vitamin E. It's great for our skin. It helps rebuild the matrix that holds our skin taught and our collagen. It keeps us resilient and bouncy so that when you press on it bounces back and keeps it from aging quickly. It's also high in antioxidants so it slows the damage, or undoes the damage, that free radicals are going to be doing, causing illness and disease and also speeding up aging.

Then as far as the cacao, raw cacao, luckily, as raw fooders we know this, it hasn't been heated so the antioxidant properties are really high. They're starting to use the word cacao now, Hershey's and all these other companies. But it's really just chocolate or whatever, cocoa. Their cocoa has been dutched. Dutching means that they're cutting the cacao that has actually been toasted with an alkaline chemical. The alkaline chemical helps that chocolate dissolve in water easier. It also helps it go further. So that dutching process is really what enables the whole chocolate bar industry to happen. So if you can imagine dutch chocolate has much less chocolate in it in the first place and then because it's heated the antioxidant properties are much less. But yet the FDA still touts chocolate as being a superfood.

So our raw food chocolate is raw. It has way more antioxidants. So that's my cake. It's bound together by whole fruit, medjool dates. It's a whole fruit so it has fiber with the sugar, which time releases the sugar into our blood. So it has fiber and potassium and iron and all these other great nutrients that are going to feed our body healthy things.

Then the frosting is made from cacao and a little bit of agave and avocado. I think in Asian cultures, even in Mexico, they blend avocado and they use it for desserts and shakes. It has such a healthy fat for our hearts. It's really great for our skin. It has a really creamy, fluffy texture. And it has a great flavor profile. I'm blending that, processing it with the cacao and some dates to sweeten it and a little bit of agave. That is creating a really fluffy, sort of like a packaged really bad for you frosting. But it's really good for you. Then you frost your cake. The cake is a really rich cake, sort of like a flourless chocolate cake texture. You can either take fresh raspberries or strawberries work really good too, and put it on your cake. Then you have your chocolate raspberry fudge ganache. And it's so good.

If you compare it to the cooked version, the cooked version has like cream and eggs and butter and all these things that are actually going to create high cholesterol in your body. It's going to make you gain weight, put on weight. It's going to also create an inflammatory response. A lot of our bodies are allergic to dairy, it's a foreign substance. So when we take it in it creates inflammation so we swell. It actually makes us look as though we weigh more or are bigger than we actually are, because we're swollen from the inside. Also, the wheat. Some of us have gluten allergies. My raw food ganache cake has none of those. It will actually help you lose weight, look better, build your skin. It helps you grow healthy hair and strong nails and all that. The healthier our insides are, reflects on the outside of our skin, which is our largest organ. It means that we'll be radiant and healthy and glowing and look really good on the outside.

Kevin: What's your take on frequent or periodic use of raw cacao?

Ani: I think frequent use of anything...Again, I think everyone is different. So if somebody is coming from a place where a lot of people are drinking like three cups of coffee a day, or more, a whole pot of coffee a day. If somebody is drinking cups of coffee every day and then now they're starting to substitute their coffee with cacao every day, that's still one step along the continuum to a healthier lifestyle. If it's someone like myself who's been doing raw food for a very, very long time, I'd have to say pretty much my whole life, by this point I actually personally cannot do any cacao at all. [Laughs] I don't need any more stimulation than I already have in my life. The littlest bit of cacao, I can't handle it very well. But I think it's just a personal thing. I know people who do it every day and they're fine. I know other people who can't do it anymore, who may be used to do it.. Some people do it occasionally. I think it's a personal thing. I think that in general, not to be an alarmist or an extremist or anything, but in general I think that anything in extreme is not good for us. So it's always good to just be aware.

Caffeine does drain our adrenal glands. Our adrenal glands is our body's center for handling stress. We get stressors from all over, from our environment, from our work, from our family, from our responsibilities, from exercising too much, from the food we eat. There's a lot of stressors that come in. There are things that help to combat that, like maca, which is an adaptagen that helps you build the adrenal glands. So I like to use maca in conjunction with cacao, if I'm going to use that, to sort of help with the caffeine that is sort of draining our adrenals a little bit. It's just good to be aware of that. Again, I think everyone is different and is at a different point along the continuum. So we all have to just experiment and see how we feel, find out what works for us.

Kevin: Here's the 10,000 dollar question - where do you get your raw almonds?

Ani: I get my raw almonds from Natural Zing. I work with Natural Zing. They actually supply my website with the raw almonds as well. They have a farm that's actually here in California, where they have an agreement with them where they actually have raw almonds that are shipped to their warehouse and they provide it to the raw community. That's where I get my raw almonds from.

Some of the Best Malaysian Desserts

Malaysia comprises three races, which are the Chinese, the Indians, and the Malays, so there are three main types of cuisines in the country. This affects the dessert recipes as well as the savory ones. Malaysians love to use sugar and coconut milk in their dessert recipes and you can get desserts from Malaysian restaurants, from food courts and hawker centers and from roadside food stalls.

Agar agar is Malaysian for "jello" and this is like a harder form of jello. It does not melt in the heat and it is made by boiling the agar agar powder in water until it dissolves. Sugar and fruit is added and then the agar agar is allowed to set. Another very popular dessert is "pisang goreng" which is fried, battered bananas.

Cheng tng is an interesting Malaysian dish and this liquid dessert is Chinese in origin. It is like a clear brown-colored soup with agar agar strips, barley, sliced water chestnuts, white fungus, lotus seeds, and ginkgo nuts. It is sweet and can be served hot or cold.

Cookies and Cakes

The word "kuih" is Malaysian and covers all cookies, cakes, and pastries. These bite-sized delicacies differ from the western equivalent because they are normally steamed rather than baked or fried. There are different versions of kuih found in the various regions of Malaysia but the main base for them is tapioca, rice flour, tapioca flour, and glutinous rice. Some kuih are layered, some are filled, some are wrapped, and others are deep-fried.

Recipe for Malaysian Caramel Cake

What you will need:

1 1/3 cups white sugar 4 oz butter flavored Crisco 6 eggs 1 1/2 teaspoons baking soda 1/2 cup condensed milk 1/2 pint water 2 cups all purpose flour

How to make it:

Grease a nine inch round cake pan and line the base and sides with greased paper, making the sides higher than the cake pan. Melt the sugar in a small pan over a moderately high heat and keep cooking it until it turns golden brown. Let the caramel cool for half a minute, then add a tablespoon of water at a time until the mixture stops spitting and sizzling and then pour in the remaining water.

Turn the heat back up and keep stirring the caramel, scraping down the sides of the pan. Take it off the heat and stir in the Crisco. Let the caramel cool. Beat half the caramel with the flour in a mixing bowl with an electric mixer, then add the rest of the caramel and keep beating until the mixture is bubbly.

Let it stand for about ten minutes. Whisk the condensed milk and eggs together until the mixture is bubbly, and then add this mixture to the flour mixture. Stir in the baking soda and pour the batter into the cake pan.

Let it stand in the oven for half an hour, then turn the oven on and heat it up to 300 degrees F. Bake the cake for about an hour. When the center is firm and a skewer inserted into the middle comes out clean, it is done.

Despite all the options out there, many of us find that we fall back on the same old desserts week after week. While they taste great at first, you can quickly get sick of pies, ice cream, or cake. Vanilla and Rum Sauces Make Holiday Desserts Special

My mother's parents were English and many of the meals she fixed for us reflected this heritage. Christmas dinner was always roast beef and Yorkshire pudding. Dessert was always plum pudding with warm sauce. There are many recipes for plum pudding and all are labor intensive. Mom made plum pudding from scratch a few times, but it was so much work she finally bought Crosse and Blackwell pudding imported from England.

The plum pudding was served with warm vanilla or rum sauce. I did not like the rich pudding, so I only ate a spoonful. But I could have eaten an entire bowl of sauce. Mom also served apple pie with warm vanilla sauce. The combination of warm sauce and fresh pie from the oven was heavenly. With a couple of changes the vanilla sauce recipe becomes rum sauce or rum-raisin sauce.

I have lightened the recipe by using Splenda Blend for Baking instead of sugar and elminating the half cup of butter in the original recipe. However, I have added a tablespoon of butter for flavor. Warm vanilla and rum sauce turn simple cakes -- vanilla, apple, and spice -- into special desserts. Top frozen waffles with vanilla ice cream and sauce and you have one of the best desserts on the planet. Garnish with a twist of orange peel and fresh mint to make your holiday desserts more festive.

WARM VANILLA SAUCE

INGREDIENTS

1/2 cup Splenda Blend for Baking

2 tablespoons cornstarch

1/2 teaspoon light salt

2 cups hot water

1 tablespoon butter (no substitutions)

2 teaspoons pure vanilla extract

dash of freshly grated nutmeg

METHOD

Combine the Splenda Blend for Baking, cornstarch, and salt in a small saucepan. Whisk in hot water. Cook over medium heat, stirring constantly, until sauce has thickened. Remove from heat. Add vanilla extract and nutmeg. Makes 8 servings.

WARM RUM SAUCE

Omit the vanilla and nutmeg. Make the sauce and remove from heat. Add 2 teaspoons of rum extract.

WARM RUM-RAISIN SAUCE

Omit the vanilla and nutmeg. Add 1/4 cup raisins to the sauce and cook until thickened. Remove from heat and add 2 teaspoons of rum extract.

Using Cinnamon In Mexican Desserts

What You Need
4 ounces unsweetened chocolate 2 sticks butter, softened 2 cups sugar 2 teaspoons vanilla 2 tablespoons mild flavored chili powder 2 tablespoons cinnamon 3 eggs 1/2 teaspoon salt 3/4 cup flour 2 cups walnuts, chopped Vanilla ice cream, optional

How to Make It

Preheat the oven to 350 degrees Fahrenheit.

Using a double boiler or the microwave, melt the unsweetened chocolate with half of the butter then allow it to cool.

While the chocolate is cooling, cream the other stick of butter with the sugar and vanilla in a large mixing bowl using an electric mixer on low speed. Increase the speed gradually while adding in the chili powder and cinnamon. Add the eggs individually mixing well after each one.

Grease and lightly flour the bottom and the sides of a 13 x 9 inch glass pan.

Add the cooled chocolate to the mixing bowl and blend well.

Combine the salt with the flour then add into the mixture. Mix on low speed until the batter is just blended together.

Stir the chopped walnuts then pour into the glass pan.

Bake the chocolate chili brownies for 25 minutes or until the center of a plastic knife or toothpick comes out clean when inserted into the middle.

Top each brownie with a scoop of vanilla ice cream just before serving if desired.

Serves 6.

Enjoying Great German Desserts

German people love to eat, and they certainly know how to cook. My grandfather was born and raised in the communal society of the Amana Colonies in Iowa, and I've attended many family reunions and dinners in the Colonies over the years. Food was designed to stick to the ribs and keep hard-working men healthy and strong. Although my grandfather passed away while my mother was still a little girl, some of the recipes for foods he loved have come down through the family. Special German dessert recipes for cookies and rich pastries, such as Peppernuts (sugar cookies) and Apfelstrudel (apple strudel), were a beloved part of my childhood.

Peppernuts were among the German dessert recipes I remember. You start making Peppernuts with 1 cup of softened butter, one cup of lard, and 3 cups of sugar. Cream them together until fluffy. Add 4 eggs and beat until very creamy. Stir in 1/2 teaspoon salt, 2 teaspoons baking ammonia, 1 teaspoon vanilla, and 4 cups flour. Beat well. Form into small balls and bake at 350 degrees until the edges are brown, around 10-12 minutes.

All the cooking in the Amana Colonies was done in communal kitchens. After graduating from 8th grade, girls were put to work in the kitchens under the direction of a head cook. Their job was to turn out all the food, including preparing the German dessert recipes, which the colonies would eat each day. At mealtime children were sent to the kitchens with covered pails so that they could pick up the food allotted to their family and bring it home. Everyone worked hard, and no one worried about calories.

Apple strudel is another of the delightful German dessert recipes that smells heavenly while it's baking. For this recipe you need to start with 10 1/2 oz. of flour, 1/6 oz. of salt, 1 1/2 oz. of melted lard, and 5 1/3 oz. of warm water. This will give you the basic dough for the dessert. Knead the dough until it becomes smooth and elastic. Divide into 3 loaves, brush each with melted butter, and allow to raise in a warm place for an hour.

While you're waiting for the bread dough to rise, you can mix your filling. Start by peeling, coring, and slicing 5 1/2 lbs. of Golden Delicious apples. Mix 5 1/3 oz. of sugar with 1 1/2 oz. of dark rum, 5 1/3 oz. of raisins, the zest and juice from two lemons, and 1/8 teaspoon of cinnamon. Toss this mixture with the apples. Mix 10 1/2 oz. of bread crumbs with 10 1/2 oz. of melted, unsalted butter. Take one loaf of dough and stretch it to fit a strudel sheet. Cover 2/3 of the sheet of dough with bread crumbs. Spread apple filling on the remaining third. Cut the edges even and roll the dough up. Place on a cookie sheet, brush the top with melted butter, and bake at 400 degrees for for 60-90 minutes.
