Spanish Christmas Recipes - Starter And Dessert

Two traditional Spanish Christmas recipes:

Starter

ALMOND SOUP

Normally served as a dessert in Castille all through the year. At Christmas, however, it is served as a first course for Christmas dinner with saffron. This spice has found it's perfect growing conditions in Spain, especially in La Mancha, where each autumn the saffron flowers are picked and in a traditional, process completely carried out by hand, the stigmas are toasted to produce the finest saffron in the world, known as Calidad Mancha.

1.25 litres (2 1/4pt) milk

75 g (3 oz) sugar

150 g (6 oz) powdered almonds or almond paste

2 tbsp fine fresh bread crumbs

2 cloves of garlic

Coarse salt

A few threads of saffron

A few sprigs of parsley

White peppercorns

200 ml (7 floz) olive oil

Garnish

12 small, very thin slices of bread, fried in olive oil

50 g (2 oz) toasted chopped almonds

Bring the milk to a boil.

In a mortar, mix together the coarse salt, saffron, pepper, garlic and parsley.

Mix the powdered almonds, sugar and the mixture from the mortar into the boiling milk.

Lower the heat and let cook gently for 8 to 10 minutes. Serve garnished with the slices of fried bread and the toasted chopped almonds.

Dessert

TOURON ICE CREAM

(ice cream made with two nougats) with chocolate sauce

Touron is a nougat of Arabic origin made with almonds and honey or sugar, without which it would just not be Christmas in Spain. There are innumerable variations - chocolate, coconut, praline, etc. - but the oldest and most authentic recipes are those for soft (Jijona) touron, made with ground almonds, or hard (Alicante) touron, made with whole almonds, or served as an ice cream, accompanied by chocolate sauce. The sauce is made not with butter but with olive oil, as it used to be made when cocoa was first brought to Spain from the Americas.

150 g (6 oz sugar)

4 tbsp water

6 egg yolks

150 g (6 oz) soft Jijona nougat

2 tbsp Malaga wine

200 ml (7 floz) liquid crème fraîche

3 egg whites

75 g (3 oz) hard Alicante nougat

Sauce

200 g (7 oz) dark chocolate

2 tbsp extra-virgin olive oil

1/2 tbsp water

Roughly break up the Alicante nougat.

Butter a 500 ml (1 pt) soufflé dish.

Place a paper collar around the edge of the soufflé dish, letting it extend 5 cm (2") above the rim. Place in the freezer.

Prepare a light syrup with the water and sugar.

Beat the egg yolks and the warm syrup together in a blender.

Break up the Jijona nougat into the two tablespoons of wine. Beat the crème fraîche. Beat the egg whites to stiff peaks.

Carefully fold together, in the same order, all of the mixtures.

Sprinkle the soufflé mould with some of the Alicante nougat.

Pour in the prepared cream mixture.

Leave in the freezer for several hours, or overnight for best results.

After removing the mixture from the freezer, remove the paper, sprinkle with the remaining Alicante nougat and serve with the warm chocolate sauce.

To make the warm chocolate sauce

Place the chocolate and water in a bowl or double boiler and melt over a pan of simmering water.

Gradually mix in the oil, whisking constantly.

Christmas dessert Recipes - Cranberry Velvet frost dessert

A floating pink cloud bursting with cranberries, cherries and marshmallows.

2 (16 oz.) cans whole berry cranberry sauce

Desserts Food

1 (20 oz.) can crushed pineapple, drained

1 (8 oz.) can crushed pineapple, drained

1 pkg. Exiguous marshmallows

1 cup green maraschino cherries, quartered

1 cup red maraschino cherries, quartered

1 teaspoon lemon juice

3 cups heavy whipping cream, whipped

Directions

In a large bowl, merge the cranberry sauce, pineapple, marshmallow, cherries and the lemon juice. Fold in the whipped cream. Spoon the composition into an ungreased 13x9x2-inch dish. Cover and freeze overnight. Take off from the freezer at least 10 minutes before ready to serve.

Makes 12 to 16 servings.

Christmas sweetmeat Recipes: Apple Pie in a Goblet Dessert

Here's a novel way to serve fresh apples - very light and elegant.

3 large tart apples, peeled and coarsely chopped

1/4 cup sugar

1/4 cup water

3/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

12 shortbread cookies, crushed

2 cups vanilla ice cream

Whipped cream

Directions

In a large saucepan, merge the apples, sugar, water, cinnamon and nutmeg. Bring all to a boil. Sell out heat; cover and simmer for 10 minutes or until the apples are nice and tender.

Uncover the pot and cook for someone else 9 to 11 minutes, or until most of the liquid has evaporated. Take off pot from heat.

Set up four goblets or parfait glasses.

In each goblet, layer one tablespoon of cookie crumbs, 1/2 cup ice cream and 1/4 of the apple mixture. Top each sweetmeat off with the remaining cookie crumbs and a large dollop of whipped cream. Ornament with an apple slice, if desired.

Christmas sweetmeat Recipes: Christmas Trifle Dessert

This colorful trifle sweetmeat looks as great as it tastes.

1 (8 oz.) can crushed pineapple

3 medium firm bananas, sliced

1 (10 oz.) jar red maraschino cherries

1 (6 oz.) jar green maraschino cherries

3 1/2 cups store bought eggnog, chilled

2 pkgs. Instant vanilla pudding mix

1 prepared angel food cake, cut into 1-inch cubes

1 (16 oz.) carton freezing whipped topping, thawed

1/4 cup walnuts, chopped, optional

Directions

Drain the pineapple, reserving the juice.

Dip the bananas into the pineapple juice. Drain and discard the pineapple juice.

Set aside the pineapple, bananas, three red cherries and three green cherries. In a bowl, whisk together the eggnog and pudding mixes; mix for 2 minutes, or until slightly thickened.

Place half of the pudding composition into a 4-quart glass serving bowl. Layer half of the bananas on top. Layer half of the pineapple on top. Layer half of the cherries on top. Layer half of the cake cubes on top. Layer half of the whipped topping on top. Repeat layers.

Garnish with reserved cherries and walnuts, if desired.

Makes 16 to 20 servings.

Christmas Dessert Recipes - Cranberry Velvet Freeze Dessert

Makes 12 to 16 servings.

Ingredients
1 fresh or canned pineapple (200g)
20 ml orange juice
1 teaspoon rum
1 teaspoon cocoanut flakes

Action
a. Cut the pineapple into thin slices.
b. Lay them layer by layer into a pretty dessert dish.
c. Pour over the mixture from orange juice and rum.
d. Sprinkle over the cocoanut flakes.

Mini Cakes (12 cakes)

Ingredients A
2 eggs
75g fine sugar
2 tablespoons cornstarch (sifted)
2 tablespoons flour (sifted)
2 tablespoons self-raising flour (sifted)

Preparation
a. Preheat oven to 180°C.
b. Butter two 12 cakes shallow muffin dish.
c. In a bowl, beat the eggs till thick and creamy.
d. Add fine sugar one tablespoon each time and beat thoroughly.
e. Combine all flour and sift them into the eggs and mix well.
f. Split the mixture into 24 mini muffins.
g. Bake them in the oven for about 8 minutes.
h. When done, cool them immediately on the rack.

Ingredients B
160 ml whipped cream
55g powdered sugar
200g mixed fruits (diced)

Action
a. In a bowl, beat half of the powdered sugar and whipped cream till stiffed.
b. Mix the fruits into the whipped cream.
c. Spread this mixture on half of the muffins.
d. Cover this with the other half of the muffins.
e. Sprinkle powdered sugar over them.

Christmas Desserts - Make Them With Splenda!

Before we begin "dishing" out some Christmas dessert recipes, let us talk about Splenda.

What is Splenda?
Splenda is a sugar substitute. It gained popularity in 1998 when the United States Food and Drug Administration approved it for use in commercially prepared baking products. Sixty other countries have followed the initiative of the American FDA.

Desserts Food

Rose Reisman, who wrote Secrets for Permanent Weight Loss (Whitecap Books, 2005) describes Splenda as a better choice sweetener. It contains sucralose which is the only sweetener made from sugar and the only sweetener that is not associated with health problems. It is not digested as a carbohydrate, so diabetics need not worry about experiencing a surge of insulin levels.
People who have used Splenda say that one advantage it has over other sweeteners is that it retains its sweet taste even when heated.

Christmas Desserts Using Splenda

You may come across recipes that don't say Splenda; instead they will say "sucralose." They're one and the same. Splenda is available in most stores and come in tiny, yellow packets.

Recipe # 1: On a cold Christmas Eve morning, what better way to wake up sleepy heads with the aromatic smell of Pear Muffins coming straight from the oven?

Pear Muffins

Preparation Time: 15 minutes
Cooking Time: 20-25 minutes
Servings: yields 12 muffins
Ingredients:
Canola oil
2 cups self-rising flour
2 tsp baking powder
¾ cup sucralose
2/3 cup skim or low fat milk
2 eggs
2 ripe pears
Procedure:
Peel and mash the pears and set aside.

Prepare your muffin pan by greasing them with canola oil. Preheat oven to 350 degrees F.
Combine self-rising flour and baking powder in a large mixing bowl. Gradually add the sucralose. In a separate bowl, blend together milk, oil and eggs. Combine this mixture with the flour mixture. Add the mashed pears. Blend all ingredients well. Spoon the batter into 12 individual muffin holes.

Bake for 15-20 minutes.

These muffins can be stored at room temperature and eaten the next day, but they are best eaten the same day!

Recipe # 2: Who doesn't love New York-style Cheesecake? It is such a popular dessert that food stores and supermarkets now sell it frozen, but why spoil the spirit of Christmas by serving frozen food? Make this recipe and turn it into a labor of love. The children, grandchildren, cousins and uncles will love you for this New York-style cheesecake made from scratch!

New York-Style Cheesecake

Preparation time: 15-20 minutes
Cooking time: 20-25 minutes
Servings: 12 individual servings (recipe is not for a whole cheese cake)
Ingredients:
1-3/4 cups Ricotta cheese
3 oz light or low-fat cream cheese
½ cup sour cream
1 egg
1 tsp vanilla extract
1 tsp lemon zest
2/3 cup Splenda
3 tsbp lemon juice (preferably fresh)
3 tbsp all purpose flour

For garnish: your favorite berries (blueberries, strawberries, raspberries, gooseberries) and icing sugar.

Procedure:
Line your muffin pan with muffin paper cups. Pre-heat oven to 350 degrees F.
Soften the cream cheese and combine with the ricotta cheese in a food processor. Add the sour cream, egg, vanilla, lemon juice (and zest), flour and Splenda. Make sure mixture is smooth and creamy. Pour into individual muffin holes.

Put the muffin tin in a larger pan containing hot water. The hot water must come up to 1/3 or halfway up the sides of the muffin tray. Put in oven and bake for 20 minutes.

After 20 minutes, take out the muffin tray from the larger tray. Set aside and let cool. Refrigerate for an hour or two. Top with garnish before serving. You can use the berries as they are, or you can mash them so they cover the top and glide on the side.

Recipe # 3: Spent the whole day in the mall for Boxing Day specials and forgot about dessert tonight? Here is a recipe for a chocolate cake. Most of the ingredients are probably already in your cupboard so no need to dash out again.

Simple & Quick Chocolate Cake

Preparation time: 20 minutes
Cooking time: 30 minutes
Serves: 6
Ingredients:
1-1/2 cups flour
2/3 cup sucralose
Pinch of salt
1 tsp baking soda
3 tbsp hot chocolate powder mix (any hot chocolate mix will do)
1 tbsp vinegar
8 tbsp canola oil
1 tsp vanilla extract
1 cup water (or 1 cup skim milk, if you prefer)

Procedure:

Sift the flour, baking soda, sucralose, salt and hot chocolate powder together. Add the rest of the wet ingredients. Blend well. Pour into an 8 inch round baking pan. Bake at 350 degree F for 30 minutes. Let cool and serve with your favorite topping.

Note: Instead of icing, you can use English devonshire cream. Spoon a few tablespoons into the dessert platter, enough for a slice of cake to sit on. Also, if you have left over slivered almonds or crushed walnuts, you can throw them into the batter.

Christmas, the most magical time of the year - the season of merriment is here again! The season of new beginnings, where forgotten vows are renewed and love fills the air around us that transcends above all. Especially children who wait in much anticipation for their favourite guy - Ole' Santa Claus! Don't you just love the growing merriment and excitement filling the air as the big day draws near? Breathe in...ah, how can you not love the aroma of delicious gingerbread, cakes and cookies baking and other food which are specially prepared only during the Christmas season?

Time for parties and celebrations and you are probably scratching your head for ideas or small little parties for family and friends. This can be a challenge especially if you are looking at coming up with something fresh and new. Some tips here if you plan to hold a party at home:

Desserts Food

Firstly, have the right mix of music. Have lively Christmas music to create the right festive mood of party cheer as your guests enjoy the food and laughter. Can you picture your guests having fun with Silent Night playing in the background? Next, decorate your house with traditional Christmas decorations to set the right atmosphere. Don't forget Christmas stockings, mistletoes and Christmas ribbons. Have plenty of lightings, especially outdoors. Pay special attention to the Christmas Tree. Make it sparklingly grand! Kids will be at your party? Arrange special activities to occupy them and ensure sufficient supervision of them. Leave the tv on with Christmas cartoons or movies. And most importantly, some Christmas dessert ideas if you're planning to serve your guests. Prepare a wide spread of food and desserts, in other words, something for everyone. Dress desserts up with pretty traditional Christmas colours. Include cream cheese desserts, chocolate desserts and the traditional Christmas cake or puddings and even homemade candies for kids. Prepare great fruit punches so that everyone can enjoy them. Always prepare more than expected. That's the spirit of Christmas - giving and abundance.

Easy chocolate desserts work best as they are a favourite with most folks, so you will almost never go wrong. You can also easily find many favourite Christmas dessert recipes that are available online or from recipe books if you are keen on making your own homemade cakes, cookies or pies. Again, easy is the keyword here, as you will want time to mingle around.

I have a simple recipe for you too - it's called the Delicious Yuletide Fruit Cake which took me less than 30 minutes to prepare so you'll have plenty of time for your guests too.

Ingredients :

1/2 cup Self-raising Flour; sifted

1 can Condensed Milk

1 tsp Vanilla Essence

1 1/2 cups Dessicated Coconut

2 1/2 cups Pecans; coarsely chopped

1 cup Dried Apricots; chopped into small bits

1 1/2 cups Dates; coarsely chopped

300 g Candied Cherries; red and green; chopped

2 tbsp Icing Sugar; for decoration

Method:

Mix chopped pecans, apricots bits, dates and cherries together. Drizzle condensed milk over fruit mixture and keep stirring. Add in vanilla essence. Now add in dessicated coconut. Fold in sifted flour until no more flour lumps.

Spoon cake mixture into greased tube pan. Bake in preheated oven at 150°C for 20 minutes before upping heat to 170°C and bake for another 30 minutes.

Allow cake to cool a little before removing from pan. Dust cake lightly with icing sugar. Keep cake in air-tight container.

Christmas Dessert Ideas

Christmas is all about getting together with friends, loved ones, and eating lots of yummy treats. No matter what gathering that you go to for Christmas, there will be food there, and lots of it. Part of the fun is eating until you can't eat anymore, and then eating more. This is the time of year that you can indulge and not feel bad about yourself, because everyone around you is doing the same thing.

When you host a holiday party or gathering, you want to make sure that you have lots of tasty Christmas desserts on hand for you and your guest. It's great to not only have some old standby favorites, but it's also great to introduce some new recipes that can become new favorites. The usual suspects for the dessert table will be cakes, cookies, and pies. Everyone will want to eat one of these items. But you can get really wild and creative by adding in new ingredients to these favorites. You can also add in extras that will change the flavors up a bit, and make your new version special and enviable.

Recipe for Depression Christmas Bread Pudding Dessert

What You Need
3 slices of fresh bread
2 eggs
½ cup sugar
¼ teaspoon salt
1 2/3 cups evaporated milk
1 cup boiling water
1 teaspoon vanilla
1 teaspoon nutmeg

How to Make It

Preheat oven to 325 degrees Fahrenheit.

Begin by breaking the bread into small pieces and then place them in the bottom of a 1 quart oven safe dish and then set aside until needed.

Using a medium size mixing bowl and an electric mixer beat the eggs and then stir in the sugar and salt. Mix well and then gradually stir in the evaporated milk. Keep beating, while gradually adding the boiling water and then mix in the vanilla. Beat well until thoroughly mixed.

Pour this batter over the bread pieces evenly and then sprinkle nutmeg on top. Place dish in preheated oven to bake for about 60 minutes or until you can insert a knife and have it come out clean.

You can serve this humble dish that was popular when times were hard just as it is, or you may want to add whipped topping or even vanilla ice cream before serving.
