Making Mexican Desserts With Cream Cheese

Cream cheese is a relatively new invention that was first created in the US in the late 1800s but this tasty soft and unripe cheese eventually made its way south of the border to Mexico. Cream cheese is featured prominently in many mouthwatering dessert recipes ranging from the simple to the complex.

This cheese is actually a combination of cream and milk along with lactic acid. Some brands include guar gum as a stabilizer to create firmness and to allow the cheese to spread better. Guar gum also keeps the cream cheese from crumbling and lengthens its shelf life.

Today you can find a wide variety of flavored cream cheeses available for making desserts including chocolate, blueberry, pineapple, and strawberry. You can also make your own flavored cream cheeses by adding in the ingredients of your choice and then blending together.

Make the most delicious empanadas with softened cream cheese, butter, sugar, and ground cinnamon then fill with strawberries, blueberries, or apple filling for a fruity dish. Also, use cream cheese to create a wonderful frosting for cakes and cookies and other treats.

A simple but incredibly sweet Mexican chocolate cheesecake makes for a wonderful dessert. Use crushed graham crackers for the crust along with melted butter. Then use softened cream cheese, heavy whipping cream, Mexican chocolate, almond, and vanilla extracts, and sugar and mix together then chill for a few hours before serving. You can also garnish your cheesecake with finely chopped walnuts or almonds.

Desserts for the adults with a few dashes of alcoholic beverages are a popular treat especially during the holidays, just be sure everyone knows they are off limits for the younger guests. Margaritas, for example, are the drink most associated with Mexico and you can easily incorporate the beverage into a variety of desserts.

A Bundt style cake with vanilla pudding mix, flavored cake mix, and a few drops of tequila and triple sec along with lime juice will definitely be the hit of any Mexican themed party. In addition, do not forget to ice the Bundt cake with a sugary cream cheese frosting and a few drops of any color food coloring for visual appeal.

Margarita Cheesecake Corn Chips Recipe

What You Need

14 ounce can sweetened condensed milk
8 ounce package cream cheese, softened
1/4 cup tequila
1/4 cup triple sec
6 ounce can frozen limeade concentrate
1 bag large, scoop type corn chips
1 can whipped topping
Lime zest for garnish

How to Make It

In a large mixing bowl, combine the can of condensed milk and the softened cream cheese and stir together until mixed well. Add in the alcohol, and the frozen limeade concentrate and stir well.

Spoon 1 tablespoon of the mixture into each corn chip and place on a baking sheet and chill in the refrigerator for at least 2 hours.

Just before the corn chips are done chilling prepare the lime zest to be used as a garnish.

Dab a bit of whipped topping on each chip and sprinkle the lime zest on top just before serving the margarita cheesecake corn chips.

Serves about 12.

Eleven Different Ways To Serve Dessert Mixes - Made With Cream Cheese And Cool Whip

DESSERT MIX RECIPE SUGGESTIONS

Many chip dip mix companies also sell dessert mixes. These wonderful dessert mixes are usually made with cream cheese and a whipped topping similar to Cool Whip. Here are 11 different ways you can serve these delicious dessert mixes. Make sure you read the Toppings sections. You can use these toppings to create your own signature desserts that will be the envy of all who taste them.

Desserts Food

FRUIT DIP OR CRACKER / COOKIE DIP   If you are making a dip, serve with animal crackers, ginger snaps, chocolate covered graham crackers, graham cracker dipping sticks or mini Vanilla Wafers. For a fruit dip, serve with apple slices, orange slices, pears, peaches, cantaloupe, strawberries or grapes. Try two or three different flavors with a variety of foods to dip into the dips. Also, try a variety of different toppings. Yummy!

TARTS  

Fill tart shells with dessert dips and then add some of the toppings listed below. The dips also act as a great filling for cannoli or cream puffs.

BITE SIZED MINI CHEESECAKES  

Another great idea for parties is Mini Cheesecakes. Buy some mini cupcake baking cups (liners) and put a full sized Vanilla Wafer in the bottom to act as a crust. Then fill the baking cups with the dip mixes topped off with one or more of the toppings listed below. Try two or more different flavors or toppings.

FULL SIZED CHEESECAKES   One of the prepared packages of dessert mix will fill a 9" graham cracker pie shell. It will be level at the top of the crust, but not mounded high. The toppings you use may add height and beauty to the cheesecake. Freeze and partially thaw before serving for best results. (See list of toppings below.) 

THICKER CHEESECAKE  

For a thicker consistency cheesecake, use 16 oz. of cream cheese and no Cool Whip. You may want to add some sugar or artificial sweetener to the mix to compensate for the sugar usually provided by the Cool Whip (actually any whipped topping may be used instead of Cool Whip).   

SPREADS   Spreads are made the same as cheesecakes, above - with or without Cool Whip, depending on how thick you want the spread to be. I suggest using the Cool Whip version. If you use all cream cheese, you may want to add some sugar or artificial sweetener to the product for added sweetness.  

These spreads are fantastic on bagels, waffles, nut breads, toast, muffins, cookies, graham crackers, and pancakes. Use them between cake layers and as icing for an unbelievable Boston Cream Pie!

CHEESE BALLS    For a cheese ball, you will want to use all cream cheese (16 oz)  - no Cool Whip. You may wish to add some sugar or artificial sweetener, if you feel you need it. Keep it in the refrigerator for four hours. Roll in a TOPPING listed below, or sprinkle a topping on top of the cheese ball. Great with fruit slices, butter cookies, chocolate covered graham cracker cookies or regular graham crackers.

CREAM PIES    Use both cream cheese and whipped topping for this recipe. You may also freeze the pie and serve it semi-thawed if you like it that way. I like my cream pies mounded high. One prepared package of mix will bring a 9" graham cracker (or chocolate cookie) pie shell to the top of the crust. If you wish to have a higher mounded pie, as I do, use another half batch of mix. (You can freeze the other half.) Another option for a higher mounded pie with our Banana Cream Pie dessert mix, is to add one to one and a half bananas - sliced, and put into you finished pie filling. Fold it in gently and it adds enough extra volume to fill the pie shell with a nice high mound. With our other dessert mix flavors, you can add many of the TOPPINGS listed below to create a higher pie or just because it adds another delicious flavor to your wonderful pie.

PARFAITS  -  What a dazzling display of color and flavor you can make with parfaits using the dessert mixes. Add two or more flavors of dessert dip, alternating between layers of whipped topping, fresh berries, chunks of pound cake, and whatever else your imagination dictates. Use some of the TOPPINGS listed below and you can't go wrong.

MOUSSE  -  The easiest way of all to serve our delicious dessert dips. Just mix them up with cream cheese and whipped topping and put them in serving dishes with a TOPPING listed below. Grab a spoon and get ready for the compliments.

CAKE FROSTING  -  I met a lady at a craft show that told me she uses the dessert mixes as a cake frosting. Use a little less cream cheese and a little more whipped topping to make it thinner to just the right consistency for frosting and easily spreadable. It adds a whole new dimension to your cakes. It's kind of like a Boston Cream Pie, but it's a cake. And remember, you can freeze them. What a great idea.

TOPPINGS -  Shredded coconut, heath bar pieces, reese's pieces, m&m's, crushed graham crackers, cool whip or similar topping, fresh fruit, candy sprinkles, crushed nuts, mini chocloate chips, crushed candy bars and more!

SERVING SUGGESTIONS 

If you are making a dip, use animal crackers, graham crackers, chocolate covered graham cracker cookies or fresh fruit. There are also two other relatively new products on the market that are wonderful too. One of the most popular ways of serving your dip is with these bite sized, graham cracker "dipping sticks". They are made just for this purpose. Your dip will taste like a cheesecake with a graham cracker crust.

Another product available are mini, bite sized Vanilla Wafers. They are about the size of a dime and are wonderful. If you are having a party, I suggest at least two batches of dip. You can try two different flavors with two different serving ideas, such as one dip with dipping sticks and one with mini Vanilla Wafers.

LIGHT OR FAT FREE WHIPPED TOPPINGS    If you are using one of the recipes that call for whipped topping (Cool Whip, etc.), be aware that "light" or fat free whipped toppings produce a much thinner product than regular toppings. It tastes fine, it just isn't as thick or stiff, and won't stand up well on your plate when it's sliced. It will be more like pudding.

IF FAT CONTENT IS A FACTOR, there is a way around this problem. Make it with light or fat free topping and then freeze it. (Again, this product freezes beautifully.) Let it thaw about 15 - 20 minutes or until it is easy to slice, but still partially frozen. SERVE IMMEDIATELY. This semi-frozen state allows the slices to stand up on your plate. However, don't let it thaw completely or you've defeated the whole purpose of freezing it. Regular whipped topping always works best if fat content is not a factor, but either way is delicious. 

FAT FREE OR LIGHT  CREAM CHEESE  WORKS FINE FOR THESE RECIPES.

Yogurt Cheese - your indulgence New Diet

If you've spent months on a diet or a couple of days is such a thing as a guarantee that the desire for a rich chocolate mousse or a delicious dip with vegetables that you like to have. Fortunately for you, there is a low-fat, low-cost alternative that can be done at home today. Just a pot of yoghurt, cheese cloth or coffee filter, a filter and a bowl.

At the starting line a sieve with cheesecloth or coffee filter and a bowl ofat least one space between the two inches. Floor Pour two cups low-fat yogurt in the filter and lid. Drain in refrigerator for 8-24 hours. The product remains in the strainer lined with cheese in your yogurt. It 'delicious, rich and spicy and the taste is anything but easy.

Here are some recipes to use with the new product.

All Lemon Cheesecake Low:

2 cups nonfat yogurt cheese
10 packets of Splenda or 6 tablespoons of sugar cane(Depending on the restriction of sugar)
4 egg whites
1 tablespoon lemon juice
A year and a half teaspoon of vanilla sugar
Half a tablespoon of grated lemon rind
1 tablespoon cornstarch

Before Combine yogurt cheese, sugar or Splenda, lemon juice, vanilla, zest for life and cornstarch in a large bowl. When well mixed, slowly stir the eggs.
Pour into 2 well greased pie dish and take in a preheated oven to 325 F.
Cook the third is scheduled for 25-35 minutes until the center. Cool and refrigerate overnight to allow cake season.

CreamyChocolate Mousse:

1 cup yogurt cheese
3 tablespoons of dark chocolate
1 packet Splenda

First, melt the chocolate in a bowl in the microwave at 10 second intervals do not burn the chocolate.
According add cheese and yogurt Splenda once the chocolate has melted. Mix well.
Third refrigerator for at least 90 minutes before serving.

Herb Yogurt Cheese Dip:

One and a half cups of yogurt cheese
2 cloves garlic, minced
Half a teaspoon of sea salt
2 tablespoons basil
1 teaspoon bouillonDill
2 tablespoons olive oil

Before Combine all ingredients and refrigerate.
With side dish, pita chips or serve foods that require a dip fingers.

Yogurt cheese is a very versatile and can be used as a substitute for cheese, sour cream, cream cheese, cottage cheese, or even be used. Use as a spread on bagels and toast filled with fruit or as a delicious layer of lasagne. The possibilities are endless.
