Homemade Chocolate Recipes

Homemade chocolate recipes provide the chocolate lovers not only with a vast variety of choices for delicious, mouthwatering dessert but also with flexibility to substitute some of the ingredients so they will have an enjoyable eating experience while having a healthy dessert.

Chocolate... healthy?

It's not a secret that chocolate eating is associated with a feeling of guilt - guilt of blowing out weight loss diet or eating unhealthy food.

Well, I have good news. The main ingredient of pure (dark) chocolate, cocoa, actually contains lots of vitamins and minerals.

- Cocoa contains L-Tryptophan that improves the mood and hence can help combat cravings for unhealthy food.

- Cocoa butter is widely used as a cosmetics base in natural and "not-so-natural' cosmetics industries because of nourishment it provides for the skin.

In order to see the weight loss benefits of chocolate you need to eat a small piece of dark chocolate daily, no more than 200 g per week.

Unfortunately many ready-made chocolate products are very low on cocoa so they actually do not provide any of the benefits mentioned above. They also contain lots of sugar and need to be avoided if you care about your health and healthy weight.

You need to choose chocolate products that contain over 65% of cocoa in order to see the health benefits of cocoa.

Why to make your own chocolate desserts at home?

1) As I already mentioned, homemade chocolate recipes provide you with flexibility to choose your own ingredients and replace some of "not so healthy" ones with healthier alternatives.
Here is a list of ingredients for one recipe, for example:

Chocolate Ice-Cream

2 ½ quarts of cream
1 ½ pint of milk
1 quart thin cream,
2 cupfuls of sugar,
2 ounces of plain chocolate bar,
2 eggs,
2 heaping tablespoonfuls of flour

To make this dessert healthier use dark chocolate, for example, substitute some of the cream with milk, reduce sugar and add vanilla to improve taste. I never tried it with whole wheat flour but this might work too! Imagine the title "Whole-wheat ice-cream for weight loss and health"!

2) You can make your favorite dessert without any preservatives, colorings or other artificial elements added.

3) You can use your creativity and make exquisite desserts for the entire family that will bring your whole family together to enjoy food prepared with love and care.

Recipe for No-Bake Chocolate Eclair Pudding

What You Need


2 packages Jello French vanilla instant pudding 3.75 ounces
3 cups milk
1 package whipped topping 9 ounces
1 package graham crackers
1 prepared can or mixture of chocolate frosting

How to Make It

Line the bottom of a 13-inch glass or decorative pan with graham crackers and set aside until needed.

Using a large mixing bowl add the pudding mix and milk and mix for 2 minutes on low speed. Fold in the whipped topping until thoroughly mix together.

Pour this mixture over the graham crackers and spread evenly. Add another layer of graham crackers and then place in the refrigerator to chill for at least 15 minutes.

Remove from refrigerator and spread chocolate frosting evenly over the top. Place this dessert dish back into the refrigerator to chill for about 45 minutes to an hour before serving.

Chocolate Facts - The History of the Hershey company

The Hershey Chocolate firm was founded in 1894 by Milton Hershey, to yield chocolate for exterior his caramel candies. Six years later, the firm was producing milk chocolate wafers, bars, and other confections.

The industrial Revolution meant that Milton Hershey was able to keep his output costs down. Milk chocolate used to be something only the wealthy could afford but Hershey's lower prices meant that at last everyone could enjoy its extraordinary flavor.

Milton decided to build a new facility in Derry Township, Pennsylvania, his birthplace. This location was especially good because it was close to the ports of both Philadelphia and New York, meaning he could get his cocoa beans and sugar easily. There were also dairy farms nearby Derry Township so the milk provide was also plentiful. This facility was fully operational by 1905 and there was no shortage of population who were keen to work there.

Hershey's Kisses and Reese's Peanut Butter Cups

Milton invented Kisses in 1907. The first ones were hand-wrapped in aluminum foil but the invention of a wrapping engine sped the process up significantly. The engine also added the famous plume on top of the Kiss candy and the name was trademarked in 1924.

Other famous products from the facility in the early twentieth century consist of chocolate chips, Krackel bars, Mr. Goodbar and Hershey's Syrup. The facility survived the Great Depression in the 1930s and was still running strong afterwards.

Their division bars kept the military going while World War Ii and other products soon appeared and gained popularity, along with dark chocolate bars, bars with almonds and white cookies and cream bars. The facility began production the coating for Reese's Peanut Butter Cups in the 1940s and Hershey took over the H B Reese facility in 1963.

Today, the firm is the prominent candy builder in the United States. The products are exported to more than ninety countries and there are nearly fourteen thousand employees all over the globe.

Net sales exceed four billion dollars a year. Eighty million Hershey's Kisses are produced every single day and this firm has gone from drive to drive since it began in the late nineteenth century.

Gluten Free Chocolate Mousse dessert With Homemade Angel Food Cake

Are you seeing for a light, delicious gluten free dessert? making a chocolate mousse sweetmeat with homemade angel food cake is a petite more work, but worth the attempt once you taste it! Gluten Free Pantry has discontinued their gluten free Angel Food Cake mix and the other mixes I have found are highly expensive. making your own gluten free homemade version is a satisfying and a cheaper alternative to buying the costly mixes.

Angel Food Cake

Desserts Food

1 cup gluten free flour (I used Bob's Red Mill All-Purpose Gf Baking Mix) 1 teaspoon xanthan gum 12 egg whites, room temperature 1 1/2 teaspoons cream of tartar 1/4 teaspoon salt 1 Tablespoon vanilla 1 1/2 cups granulated sugar

Directions:

Preheat oven to 325 degrees. Isolate egg whites in a bowl and let them come to room temperature. In a Isolate medium bowl, sift gluten free flour, salt, xanthan gum, and 3/4 cup of sugar. Beat the egg whites until foamy. Add the cream of tartar. Beat until the egg whites form soft peaks. Beat in the other reserved 3/4 cup of sugar a petite at a time. Beat until stiff peaks form. Slowly fold in flour combination about 1/4 cup at a time. Once the flour combination is combined, fold in the vanilla.

Slowly pour the batter into a tube pan (I used a bundt cake pan). Whether drop pan from 12 inches above counter or run a knife through the cake batter to eliminate any air bubbles. Bake for 50-55 minutes until top is golden brown and sides begin to pull away. Cool for 10 minutes and then remove from pan.

After the cake is cooled, it is time to make the chocolate mousse part of the dessert.

Next, I made the Chocolate Mousse sweetmeat which calls for Gf cake from above:

Chocolate Mousse Dessert:

1 holder chocolate chips, 12 oz. Semi sweet 3 eggs 2 pints heavy whipping cream 3 tsp powdered sugar 1 Gf angel food cake

Melt chocolate chips in microwave. While melting, whip cream with 3 tsp powdered sugar until whipped cream consistency is achieved (it takes my stand mixer about 10-15 minutes).

While cream is whipping, break apart angel food cake and arrange in 9x11 lasagna dish or trifle dish.

Add 3 eggs to melted chocolate and mix. Fold chocolate into whipped cream, pour over angel food cake pieces and refrigerate.

In Western culture sweetmeat is a procedure that typically comes at the end of a meal, usually consisting of sweet food. The word comes from the French language as sweetmeat and this from Old French desservir, "to clear the table" and "to serve." common desserts contain cakes, cookies, pastries, ice cream, and candies. Fruit may also be eaten with the dessert.

The word sweetmeat is most ordinarily used for this procedure in U.S., Canada, Australia, and Ireland, while sweet, pudding or afters may be alternative terms used in the Uk and some other common countries, along with India. In England, the term pudding might be used among the Upper and Upper-middle classes, with sweetmeat only used if the procedure consists of fruit.

Desserts are often eaten with a sweetmeat spoon, intermediate in size between a teaspoon and a tablespoon.

Well you have guests arriving at your place and you have no clue to what to make for dessert. Here is a formula that takes less of your time and is very much lavish in presentation.

Ingredients: Vanilla and chocolate ice cream, walnuts, chocolate sauce, biscuits, caramel.

Take a bowl and spread a layer of crushed biscuits followed by a layer of vanilla ice cream, then put some chocolate sauce, then a layer of walnuts,then the layer of chocolate ice cream.

Keep on repeating as many layers you wish to make in repeated cycles of your choice. Once you are concluded with this put caramel on the top of it.

Put this bowl in the freezer and cut it vertically so that you see the different layers while you serve the appetizing dessert.

You can have similar dishes with using vanilla with strawberries, vanilla with mangoes...and can also have many fruits added in one...

Gluten Free Chocolate Mousse sweetmeat

A yummy sweetmeat every person will enjoy. This light sweetmeat is a beloved and looks great in a trifle dish! I originally received this method years ago before eating gluten free. I have modified it so that it tastes just as good as the original recipe, if not better!

Ingredients

1 Whole Gf Angel Food Cake or 1 package Gluten Free Pantry Angel Food Cake Mix, prepared 1 package (12 oz) Semi Sweet Chocolate Chips 3 Eggs 2 Pints Whipped Cream 3+ Tsp Powdered Sugar I have made this method by both buying a gluten free angel food cake and also by making the cake using the gluten free pantry mix. Whether way turns out great, but I prefer to make the cake from the mix, it seems to taste fresher that way.

Break angel food cake into pieces, dispose first layer in trifle dish (this also works as one layer in 9 x 12 glass lasagna pan)

Melt chocolate chips in microwave, stirring often. Cook on high for 30 second, take out of microwave and stir. Repeat until all chocolate is melted. Once melted, set aside to cool.

Whip cream with powdered sugar until fluffy.

Add eggs to cooled chocolate and mix

Fold in whipped cream to chocolate mixture

Pour whipped cream/chocolate aggregate onto first layer of angel food cake, repeat layers to top of trifle dish (or pour entire aggregate over single layer in glass pan).

This dish also looks nice and tastes good with shredded hershey bar or heath bar over the top.

Cover and refrigerate overnight or for 2-3 hours.

Classic Rich Dark Chocolate Pudding Plus 5 Fabulous Luscious Variations On A Theme!

What does: crying over spilled milk, cream rising to the top, proof in the pudding and food for thought have to do with life? Everything. We just can't get over talking about food, especially with reference to dessert foods. Cake, peaches, cherries, apples, pie and pudding seem to find their way into everyday conversation. And why not? We should have our cake and eat it too! What chocolate lover can resist the rich, delectable taste of a creamy chocolate pudding? I know I can't.

Historically, chocolate pudding is a variation on chocolate custard, with starch used as thickener rather than eggs. Early versions of the dish using both egg and flour can be found in the 1918 edition of Fannie Farmer's Boston Cooking School Cook Book and in the 1903 edition of Mary Harris Frazer's Kentucky Receipt Book. In the late 19th and early 20th century, chocolate pudding was thought of as an appropriate food for invalids or children as well as a dessert. It was not considered a health food in the modern sense of the term, but as a wholesome, high-calorie food for those with poor appetites due to ill-health. General Foods (Jell-O) introduced chocolate pudding mix in 1934 as "Walter Baker's Dessert". It was renamed "Jell-O Chocolate Pudding" in 1936. Ref: Wikipedia.

Chocolate pudding is a class of dessert with chocolate flavors. There are two main types: a boiled then chilled, texturally a custard set with starch, version common to North America while a steamed or baked, texturally similar to cake, version is popular in the primarily British Isles, Australia and New Zealand.

A silky-smooth and amazingly satisfying decadent rich dark chocolate pudding with 5 easy variations. I am sure there's more, you can come up with more of your own! A delicious chocolate pudding that is the only way to end a dinner for two, a celebration or a simple family mealtime. I know this will become a favourite stand-by for sure! You won't find this in Gourmet or Bon Appetite! This recipe is so full-proof, your 6 year old could make it!

Dark Chocolate Pudding

2 cups milk (any kind) ½ cup brown sugar (or white) 1 tbsp cocoa 1 1/2 tbsp unsalted butter, cut into bits 8 oz. 70% dark chocolate 1 tsp vanilla extract (pure) ¼ tsp salt 2 oz dark chocolate shavings 2 oz arrowroot powder or 2 tbsp cornstarch

Dark Chocolate Pudding: Pour 1½ cups milk into a medium saucepan and add sugar, cocoa, chocolate, vanilla and salt. Bring to a simmer and whisk until chocolate has melted and it's smooth. Meanwhile whisk the cornstarch into the remaining milk until it has dissolved. Slowly pour the cornstarch mixture into the chocolate mixture whisking well. Continue cooking over low heat, stirring constantly until the pudding has thickened. Take off heat and whisk in butter cubes until it becomes shiny. Then, pour into your choice of tall parfait glasses, ramekins or small bowls and refrigerate until set, about an hour. Serve plain or with vanilla ice cream or whipped cream.

HINT- Use cornstarch or arrowroot, but there is a slight variance in the smooth glossy texture and sheen that comes with using arrowroot powder.

Serves 4

VARIATION # 1 WHITE CHOCOLATE CREAM

1 cup 35% whipping cream ½ tsp vanilla extract 4 oz. white chocolate

Heat cream and white chocolate together in a small saucepan, just until chocolate has melted. Whisk smooth. Pour into a medium bowl and place in refrigerator until well chilled. Once cooled whip into soft peaks and dollop onto chocolate pudding and garnish with chocolate shavings. (Recipe above)

VARIATION # 2 - COCONUT CHOCOLATE PUDDING - Use 1 14 oz Coconut milk + 2 oz of water. Serve dusted with the coconut flakes previously toasted in a dry skillet.

VARIATION # 3 - ALMOND CHOCOLATE PUDDING - Replace milk with 2 cups unsweetened almond milk and almond extract instead of vanilla. Top with toasted slivered almonds previously toasted in a dry skillet.

VARIATION # 4 MEXICAN CHOCOLATE PUDDING - Replace dark chocolate with Mexican Chocolate (it can be used in traditional Mexican dishes like mole and it can be used in baking for an unusual flavour) Alternately, replace vanilla extract with 1/2 tsp cinnamon or cayenne. Kick it up yet another notch by adding 1 shot of Kahlua, Mexican coffee-flavored liqueur.

VARIATION # 5 - SPIKED CHOCOLATE PUDDING -Replace vanilla extract with Chocolate liquor or Tia Maria (Jamaican coffee liqueur) or Kahlua (Mexican coffee-flavored liqueur)

Motocross Party Menu Dessert is Chocolate Dipped Kebobs

The Motocross party menu is a great way to experiment and be creative in your food planning. You can work on creating your own motorbike shaped cake for a birthday party. Or the relish tray can feature little wheel shaped wedges of radish and carrot. It's all fun and great for the guests to nosh on. If you are having a party for younger Motocross fans, look out for some simpler, more traditional party foods to serve up in the theme.

A lot of kids love pizza and it's very easy to make your pizza mesh with the Motocross theme by arranging the toppings in the shape of a motorbike. Or using them to spell out the word 'motocross'. Begin by melting about a cup of chocolate chips and a one inch block of paraffin wax together in a sauce pan. The mixture should be thoroughly melted together and liquid. Next open the package of skewers and arrange your fruit before you. Begin skewering four or five pieces of fruit with one of the skewers. When you skewer the mandarin orange slices be sure to skewer them lengthwise on the skewer so they hold better.

Push the fruit down past the pointed tip on the skewer. Take a pair of sharp scissors or a knife and cleanly cut away the sharp point of the skewer. Don't leave any splinters or over hanging strips of wood. This will make it safer for the kids when they eat the kebobs.

Place your kebobs into the saucepan with the melted chocolate to coat them. If you need use a ladle to pour more chocolate over top the pieces of fruit. Set the coated chocolate kebob on a flat metal pan or on some wax paper to cool. Repeat with all of the kebob skewers you make up. Once the chocolate solidifies place the kebobs into the freezer for a cold treat at the motocross party.

Two French Chocolate Desserts - Ready in a Snap

The French are well known for their elegant chocolate desserts, each one more elaborate then the next. But some of the most popular French chocolate dessert recipes are very quick and easy to prepare. Either one of these chocolaty treats would be fit to serve company, but no need to wait until you're entertaining to give them a try.

Please note that although they are simple to make, these French chocolate desserts require the best ingredients possible, especially for the chocolate, which should be a good quality baking chocolate. Also, do make these desserts ahead of time so they have enough time to chill before serving.

Chocolate Tart
Tarte a la Ganache

1 9 inch pre-baked tart or pie shell 10 ounces good quality, sweet, dark chocolate 1 1/4 cups heavy cream

Break the chocolate into small pieces and place in a sturdy, heat resistant mixing bowl.

Pour the cream into a small saucepan and warm on medium heat. Remove from heat as soon as it comes to a boil.

Pour the hot cream on top of the chocolate and cover the mixing bowl with a plate. Let it sit for five minutes.

Using a wooden spoon stir the chocolate and cream until completely mixed. Pour into the pie shell.

Refrigerate your tart for at least an hour before eating. You can decorate it just before serving with colored candies, chocolate curls and/or whipped cream..

Makes 8 servings

Chocolate Mousse
Mousse Au Chocolate

8 ounces good quality dark cooking chocolate 6 eggs, at room temperature whipped cream (optional)

Melt the chocolate in a double boiler.

Separate the eggs into two large bowls.

Beat the egg whites until very stiff.

Stir the melted chocolate into the egg yolks, beating vigorously until the mixture is smooth.

Stir one third of the egg whites into the chocolate mixture and mix until thoroughly blended.

Carefully fold in the rest of the egg whites.

Spoon the mousse into individual parfait glasses, chill and serve with whipped cream and shaved chocolate if you wish.

4 to 6 servings

Chocolate Walnut Pudding

In Western culture dessert is a course that typically comes at the end of a meal, usually consisting of sweet food. The word comes from the French language as dessert and this from Old French desservir, "to clear the table" and "to serve." Common desserts include cakes, cookies, pastries, ice cream, and candies. Fruit may also be eaten with the dessert.

The word dessert is most commonly used for this course in U.S., Canada, Australia, and Ireland, while sweet, pudding or afters may be alternative terms used in the UK and some other Common countries, including India. In England, the term pudding might be used among the Upper and Upper-middle classes, with dessert only used if the course consists of fruit.

What you will need:

2 oz grated Mexican chocolate 1/2 teaspoon vanilla extract 2 cups milk 4 eggs 1 1/4 cups sugar 1 1/2 tablespoons slivered almonds
How to make it:

Preheat the oven to 350 degrees F. Cook 1/4 cup of the sugar with the milk gently in a pan over a low flame. Separate the eggs and beat the egg yolks with 1/4 cup of sugar. Pour the egg yolk mixture into the milk and keep cooking it, stirring all the time, until the mixture is thick. Do not let it boil.

Stir in the chocolate until the mixture is smooth. Let it cool down and divide it between four serving dishes. Beat the egg whites and sugar until you get stiff peaks, then divide this mixture between four custard cups. Put these in a pan with an inch of water in it and bake until the meringues are cooked and golden brown.

Add a meringue to each of the serving dishes and sprinkle the almonds over the top. A dollop of vanilla ice cream would also be a good garnish for these Mexican desserts.

How to Make It

Cut the butter into the flour until the mixture feels crumbly. Stir in the peanuts. Press this mixture into an ungreased 13x9 inch baking dish. Bake at 350 degrees F for 16 to 20 minutes, or until lightly browned. Let cool on a wire rack.

In a mixing bowl, beat the powdered sugar and cream cheese together. Add the peanut butter and mix until smooth. Fold in 1-1/2 cups of Cool Whip. Spread this mixture over the crust carefully.

In another bowl, whisk the milk and the two pudding mixes together for two minutes. Let the mixture stand for two minutes, or until soft set.

Carefully spread the pudding mixture over the top of the peanut butter mixture. Top with the remaining whipped topping.

Garnish with chopped peanuts or chocolate curls if you wish.

Chill the dessert for a minimum of 2 hours before serving.

Serves 16.
