Try These Delicious Apple Recipes - Indiana Apple Pudding and Baked Apple Doughnut Fritters

Apples are one of our favorite fruits and there seems to be no end to the ways we use. Here are some recipes for different apple treats. With apple season coming on, we will have lots of apples to use. Try this Indiana Apple Pudding which is wonderful served warm. This is a perfect fall or winter dessert. For a completely different apple treat, try these Baked Apple Doughnut Fritters.

INDIANA APPLE PUDDING

2 cups diced apples
1 cup sugar
1 egg, well beaten
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 cup chopped nuts
1 cup all-purpose flour
1/2 tsp salt
1 tsp vanilla

Preheat oven to 350 degrees.

Mix together the apples and sugar; add egg. Sift together the baking soda, cinnamon, salt and flour; add to apple mixture and mix well. Stir in the vanilla and nuts. Pour mixture into an 8 x 8-inch baking pan. Bake at 350 degrees for 25 minutes.

SAUCE:

1/2 cup sugar
1/2 cup brown sugar
1/4 cup butter or margarine
2 tbsp flour
1 cup water

Cook sauce until thick and pour over pudding as soon as it comes out of the oven. Serve warm with whipped cream or ice cream.

BAKED APPLE DOUGHNUT FRITTERS

1 1/2 cup sifted flour
1 3/4 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 cup sugar
1/3 cup shortening
1 egg, beaten
1/4 cup milk
1/2 cup grated apples
1/2 cup oleo, melted
1/3 cup sugar
1 tsp cinnamon

Sift together the flour, baking powder, salt, nutmeg, and 1/2 cup sugar. Cut in shortening until mixture is fine. Mix together the egg, milk, and apple. Add mixture, all at once, to the dry ingredients and mix together quickly. Fill greased muffin tins 2/3 full. Bake at 350 degrees for 20 to 25 minutes. Mix together the 1/3 cup sugar and the cinnamon. Remove fritters from the pans immediately and roll in melted oleo then roll in the sugar cinnamon mixture. Delicious served warm.

Recipes for Delicious Desserts Featuring Favorite Fall Fruits

Is there anything better on a cool Fall day than coming into the house and smelling the aroma of the season's best fruits? Well, feeling the warmth of the oven might be a close second. Here are some recipes to enjoy this Fall and Winter (or anytime of the year), using some of our Fall favorites - pears, apples, and blackberries. Grab a cup of coffee, hot tea, or hot chocolate and enjoy a real treat.

SNAPPING CRANBERRY-PEAR CRISP

FRUIT MIXTURE:

1 can whole berry cranberry sauce
2 tbsp flour
5 med pears, peeled and sliced*

TOPPING:

1 cup coarsely crushed gingersnap cookies
1/2 cup all-purpose flour
2 tbsp brown sugar
1/4 cup butter, melted

Preheat oven to 375 degrees.

For the fruit mixture, combine cranberry sauce and flour in a medium mixing bowl; mix well. Add the pear slices, toss to coat evenly. Place fruit mixture in a baking dish and set aside.

For the topping, in a small mixing bowl, combine cookie crumbs, flour, brown sugar, and butter; mix well. Sprinkle the crumb mixture over the fruit mixture. Bake for 30 to 35 minutes or until the pears are tender and the topping is golden brown.
Note: This is just as good when you substitute apples for the pears.

Oregon's Blackberry-Apple Crunch

Filling:

4 cups sliced Granny Smith apples
2 cups fresh blackberries (may use frozen but do not thaw)
3/4 cup sugar

Topping:

3/4 cup brown sugar, firmly packed
3/4 cup all-purpose flour
3/4 cup rolled oats
1/2 cup chopped walnuts
1/2 cup butter
1/2 tsp cinnamon

Preheat oven to 350 degrees.

In a large bowl, combine the apples, berries, and sugar. When well combined, pour mixture into a 9 x 13 x 2-inch baking pan or dish.

In another large bowl, combine the brown sugar, flour, oats, walnuts, butter and cinnamon; blend together using your fingers. Sprinkle over the top of the fruit. Bake at 350 degrees for approximately an hour or until the top is brown and fruit is bubbly.

Diabetic Fudge

1 14 1/2 oz. Evaporated milk

3 tbsp. Cocoa

1/4 c. Oleo

Liquid Sweetner to equal 1/2 c. Sugar

1/4 tsp. Salt

1 tsp. Vanilla

2 1/2 c. Graham cracker crumbs

1/4 c. Nuts

Combine milk and cocoa in saucepan. Beat well. Add oleo, sweetner, salt. Bring to boil. Take off from heat. Stir in remaining ingredients except 1/4 cup graham crackers. Cool about 15 minutes. Divide composition into 32 balls. Roll in remaining cracker crumbs and chill.

These recipes look tasty don't they? Believe me, they taste even great too. So by combining sensible eating with quarterly exercise you can control and even beat your type 2 diabetes for good. A Recipe Collection--top 3 Most Requested Delicious Desserts

When you are thinking about serving dessert at your next party, consider offering your guests one of these delicious, homemade desserts. I have found that of all the desserts I have served, these are my "Top 3 Most Requested Delicious Desserts" (in no particular order). Enjoy!





Number One Most Requested Delicious Dessert--Raspberry White Chocolate Dream Bars





1 box white cake mix


1/3 cup evaporated milk


1-1/2 sticks melted butter


1 cup chopped nuts


1/2 cup seedless raspberry jam


12 oz. white chocolate chips





Combine cake mix, milk, butter and nuts. Makes a very gooey dough. Spray a 9 x 13 pan and spread half of the dough into the bottom of the pan. Bake for 10 minutes at 350 degrees.





Melt the jam in the microwave (about a minute) and spread on top of hot crust. Immediately sprinkle chocolate chips over jam. Crumble remaining dough on top and bake an additional 20-25 minutes. Cool completely before cutting.





For bigger parties, this recipe easily doubles and can be made in a 15 x 10 pan.





Once you get the hang of this technique, you can think of all sorts of combinations. How about using chocolate cake with mint chips? Or lemon cake with white chocolate?





Number Two Most Requested Delicious Dessert--Chocolate Amaretto Bundt Cake





1 pkg. chocolate devil's food cake mix


1 small pkg. instant chocolate pudding mix


4 eggs


1 cup milk


1-1/2 oz. Amaretto liqueur


1/2 cup vegetable or canola oil


1 cup semi sweet chocolate chips


1 cup fresh raspberries (optional)


1/2 cup seedless raspberry jam (optional)


Whipped cream (optional)





Glaze





1 stick butter


3/4 cup sugar


1/2 cup Amaretto





Preheat oven to 325 degrees. Combine first 6 ingredients and blend well. Stir in chips. Grease and flour a bundt pan. Pour batter into the prepared pan.





Bake for 1 hour or until toothpick comes out clean.





Melt glaze ingredients in a saucepan or microwave. Pour 2/3 of glaze over top of cake while cake is hot from oven and still in pan. Allow cake to remain in pan for 25 minutes. Remove cake from pan and drizzle with remaining glaze.





When I make this cake dessert, I fill the middle with fresh raspberries and present it on my grandmother's crystal pedestal cake stand which is very dramatic.





Just before serving, I make a raspberry sauce by melting the jam in the microwave.





Each lucky guest gets a plate with some of the sauce, a slice of cake, a few berries and some whipped cream. Yum!





Number Three Most Requested Delicious Dessert--Mystic Mint Cookies





These are melt-in-your-mouth heaven!





Dough


1 cup sugar


1 stick (1/2 cup) butter, softened


1 teaspoon vanilla


1 egg


2 squares (1 oz. each) unsweetened chocolate, melted and cooled


1 cup all purpose flour


1/2 teaspoon salt


Heat oven to 375 degrees.





Mix sugar, butter, vanilla, egg and unsweetened chocolate. Stir in flour and salt.





Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Flatten each cookie with fingertips. Bake until set, about 8 minutes. Remove to cooling racks and cool completely.





Peppermint Frosting


2-1/2 cups powdered sugar


1/2 stick (1/4 cup) butter, softened


3 tablespoons milk


1/2 teaspoon peppermint extract





Mix all frosting ingredients until smooth and of spreading consistency.





Chocolate Drizzle


1/2 stick (1/4 cup) butter, softened


2 tablespoons corn syrup


1-6 oz. package semisweet chocolate chips





Simmer all drizzle ingredients over low heat. Stir constantly until butter and chocolate are melted.





Spread peppermint frosting over cooled cookies then drizzle each with chocolate mixture. Leave on counter for 2-3 hours until frosting is set.





If you serve any of these homemade desserts, you can count on your guests being very happy. And I will bet that you will be handing out recipes, just like I do at my house.

1/3 c. Plain flour

1/4 tsp. Baking soda

1/4 tsp. Baking powder

Pinch of salt

2 tbsp. Shortening

2 tbsp. Peanut butter

1 tsp. Sweet 'n Low

1 egg, beaten

Mix and stir all ingredients in order (flour, baking soda, baking powder, salt, shortening, peanut butter and Sweet 'n Low). Add beaten egg and mix well. Drop by large teaspoon on greased cookie sheet. Bake at 350 degrees for 10 minutes.

Diabetic Fudge

1 14 1/2 oz. Evaporated milk

3 tbsp. Cocoa

1/4 c. Oleo

Liquid Sweetner to equal 1/2 c. Sugar

1/4 tsp. Salt

1 tsp. Vanilla

2 1/2 c. Graham cracker crumbs

1/4 c. Nuts

Combine milk and cocoa in saucepan. Beat well. Add oleo, sweetner, salt. Bring to boil. Take off from heat. Stir in remaining ingredients except 1/4 cup graham crackers. Cool about 15 minutes. Divide compound into 32 balls. Roll in remaining cracker crumbs and chill.

Most Requested Hot Appetizers, Delicious Desserts and Classic Cocktails

I am not a "throw-a-can-of-peanuts-on-the-table" kind of gal! When I am planning a party, it is important to me that I choose thoughtful, satisfying recipes that:





Are simple to make


Have few ingredients


Hold up well over time


Are pleasing to look at and of course,


Taste great!





Over the years, I have tried out a lot of recipes on my friends and family and no doubt about it, the "Most Requested Hot Appetizers, Delicious Desserts and Summer Drinks" are those listed below (in no particular order).





Top 2 Hot Appetizers





Number One Most Requested Hot Appetizer--Warm Chipotle Cheddar Dip





2 cups shredded Cheddar cheese


1 cup shredded Monterey Jack or Mozzarella cheese


1/2 cup mayonnaise


1-8 oz. can whole kernel corn, drained (3/4 cup)


1-4 oz. can chopped green chili peppers, drained


2 teaspoons finely chopped canned chipotle chili peppers in adobo sauce (or to taste)


1/4 teaspoon garlic powder


1 medium tomato, seeded and chopped (3/4 cup)


1/4 cup sliced green onion


2 tablespoons snipped fresh cilantro


Vegetables, crackers or chips





I found this dip when I was on a low carb diet and was looking for a party appetizer that would work well with vegetables. Something with a robust flavor that would perk up the veggies. Well this one definitely fit the bill.





This appetizer has become a favorite among my friends. It's served multiple times throughout the year at various parties that I either host or attend.





You can make it as smokey and spicy as you want by adjusting the amount of chipotle peppers (smoked jalepenos) but watch out. You can easily go from mildly spicy to blow-your-face-off hot by adding too much!





Steps to Make Cheddar Chipotle Dip





Preheat oven to 350 degrees.





Stir together cheeses, mayonnaise, corn, green chili peppers, chipotle chili peppers and garlic powder in a large mixing bowl. Spread mixture into a 1 quart, covered dish. Bake for 30 minutes until bubbly.





Top with tomato, green onion and cilantro. I like to make a pattern out of the toppings so I put the tomatoes all in the middle, make a ring around them with the green onion then sprinkle the cilantro over all.





Serve with vegetables, like red, green and yellow peppers. Tostido and Frito Scoops work well too.





Number Two Most Requested Hot Appetizer--Warm Green Chili Dip





8 oz. shredded mozzarella cheese


8 oz. shredded mild cheddar cheese


2 cups mayonnaise


1 small sweet onion, minced


1 can (4 oz.) chopped green chilis, drained


1-1/2 oz. chopped pepperoni


1/2 cup sliced ripe olives


Tostidos or Fritos Scoops





In a shallow baking dish, combine the first five ingredients. Top mixture with the pepperoni and olives. Bake at 325 degrees about 25 minutes or until bubbly.





Serve with Scoops, crackers or assorted fresh vegetables.





Note: I do not recommend using reduced fat mayonnaise.





Speaking from personal experience, both of these hot appetizers are guaranteed to be a hit at any get together.





WARNING: Get ready to hand out the recipes!





Top 2 Delicious Desserts





Number One Most Requested Delicious Dessert--Raspberry White Chocolate Dream Bars





1 box white cake mix


1/3 cup evaporated milk


1-1/2 sticks melted butter


1 cup chopped nuts


1/2 cup seedless raspberry jam


12 oz. white chocolate chips





Combine cake mix, milk, butter and nuts. Makes a very gooey dough. Spray a 9 x 13 pan and spread half of the dough into the bottom of the pan. Bake for 10 minutes at 350 degrees.





Melt the jam in the microwave (about a minute) and spread on top of hot crust. Immediately sprinkle chocolate chips over jam. Crumble remaining dough on top and bake an additional 20-25 minutes.





Cool completely before cutting. For bigger parties, this recipe easily doubles and can be made in a 15 x 10 pan.





Once you get the hang of this technique, you can think of all sorts of combinations. How about using chocolate cake with mint chips? Or lemon cake with white chocolate?





Number Two Most Requested Delicious Dessert--Chocolate Amaretto Bundt Cake





1 pkg. chocolate devil's food cake mix


1 small pkg. instant chocolate pudding mix


4 eggs


1 cup milk


1-1/2 oz. Amaretto liqueur


1/2 cup vegetable or canola oil


1 cup semi sweet chocolate chips


1 cup fresh raspberries (optional)


1/2 cup seedless raspberry jam (optional)


Whipped cream (optional)





Glaze





1 stick butter


3/4 cup sugar


1/2 cup Amaretto





Preheat oven to 325 degrees.





Combine first 6 ingredients and blend well. Stir in chips. Grease and flour a bundt pan. Pour batter into the prepared pan. Bake for 1 hour or until toothpick comes out clean.





Melt glaze ingredients in a saucepan or microwave. Pour 2/3 of glaze over top of cake while cake is hot from oven and still in pan. Allow cake to remain in pan for 25 minutes. Remove cake from pan and drizzle with remaining glaze.





When I make this cake dessert, I fill the middle with fresh raspberries and present it on my grandmother's crystal pedestal cake stand which is very dramatic.





Just before serving, I make a raspberry sauce by melting the jam in the microwave. Each lucky guest gets a plate with some of the sauce, a slice of cake, a few berries and some whipped cream. Yum!





Top 2 Summer Drinks





When most people host parties, they usually have the basic alcoholic beverages, like beer and wine, but rarely do you see a host offer a selection of really special summer drinks. I have perfected my list of offerings over the years and now I share my Top 2 with you.





Number One Most Requested Summer Cocktail--Limoncello Mint Lemonade





1/2 cup lemonade concentrate


1/4 cup fresh mint leaves


1 tbsp. fresh lemon juice


Ice cubes


1/4 cup Limoncello (lemon liqueur)


1/2 cup club soda


Lemon and Mint for garnish





In a small pitcher, "muddle" mint leaves together with lemonade concentrate and lemon juice. Muddle means to bruise the leaves so they release their flavor. I use the end of a wooden spoon.





Stir in ice cubes, Limoncello and club soda and pour into 4 glasses. Top them off with a lemon slice, a sprig of fresh mint and an umbrella.





Makes 4-10 oz. drinks.





Number Two Most Requested Summer Cocktail--Fruited Brandy Punch





This one has become a favorite at my home and a lot of the parties I attend, most likely because everyone loves it and you can make a huge amount and serve it in a punch bowl.





1/2 part brandy (I use Christian Brothers brand)


1 part lemon-lime soda


2 parts fruit juice (Cranberry-Peach blend is my favorite)


1/2 bag frozen fruit (Blueberries and strawberries look great)


1 fruited ice ring (see recipe below)


Slices of lemons, limes and oranges, if desired





Mix fruit juice and frozen fruit together in a nice punch bowl or container. Pour in lemon-lime soda, gently stir and then float an ice ring on top (see recipe below).





Rather than spike the punch, I serve the brandy on the side so my guests who prefer non-alcoholic punch can drink it too.





To make ice ring





Pour 1-2 cups of the juice mixture from above into a Bundt pan or another mold. Add some of the fruit and/or fresh citrus slices. Freeze overnight.





Just before serving, set the pan into some hot water to loosen the ice ring and then turn it into the punch bowl. It makes a really beautiful presentation, cools the punch and since it's made with juice, it will not water down the punch. Perfect!





This recipe can easily be altered so you can serve it from a Drink Fountain which is really gaining popularity lately. Just leave out the fruit and the ice ring.





If you went to a summer party and somebody handed you any of these summer drinks, wouldn't you think that the hosts went out of their way to make things special? That they really took time to get it right? Everybody loves a special summer drink on a warm sunny day.

How to Make Delicious Desserts Using Fresh Fruits - Dazzling Peach Trifle and Gelatin Banana Split

The only thing better than fresh fruits are desserts made with those same fresh fruits. Try these delicious fruit desserts to rave reviews from family and friends. Gelatin Banana Split Desserts use fresh strawberries, bananas, pineapple along with maraschino cherries. This is a great summertime dessert, although it is also perfect year-round. This makes a very pretty dessert for parties, even holidays. The Peach Trifle is not only a delicious dessert, it makes a gorgeous presentation. Both of these recipes have eye appeal.

GELATIN BANANA SPLIT DESSERT

Desserts Food

1 1/2 cups boiling water
1 pkg (8 serving size) strawberry OR cherry gelatin
2 cups cold water
1 pint vanilla ice cream, softened
frozen whipped topping, thawed
sliced bananas
sliced strawberries
pineapple chunks (if using canned, drain very well)
Chopped pecans
halved maraschino cherries, if desired

In a large bowl, place the dry gelatin and add the boiling water. Stir two minutes to be sure all the gelatin is dissolved. Stir in the cold water. Add the ice cream and stir until smooth. Pour into a serving bowl leaving room for the toppings later. Refrigerate at least 3 hours or until firm. Before serving, top with the fruits. Pile whipped topping in the center and sprinkle with chopped nuts. Top with some halved maraschino cherries, if desired.

DAZZLING PEACH TRIFLE

1 box (16-oz) Angel food cake mix
1 tbsp chopped crystallized ginger
1/4 cup confectioners' sugar, divided
3/4 cup peach preserves
1 quart peach slices
1 pint blueberries
1 tbsp lemon juice
2 cups heavy cream
1/2 cup prepared lemon curd

Preheat oven to 350 degrees. Prepare the cake batter by preparing the mix according to package directions then stir in the crystallized ginger. Line a jelly roll pan, 11 x 17-inches, with parchment paper. Pour batter into the pan. Bake at 350 degrees for 18 minutes or until a wooden toothpick inserted in the center comes out clean. Let cake cool for 10 minutes. Sprinkle 1 tablespoon of the confectioners' sugar and remove the parchment paper. Cut cake lengthwise into 3 equal pieces. Starting with the long side, tightly roll each piece in paper towel. Let cool completely. Unroll cakes and spread each piece with 1/4 cup of the peach preserves. Re-roll the cakes. Cut each roll into 12 slices.

In a bowl, combine the peach slices, blueberries, lemon juice, and 1 tablespoon confectioners' sugar; toss gently to coat.

In medium bowl of electric mixer, beat on high speed the heavy cream and remaining confectioners' sugar. Beat for 2 minutes or until stiff peaks form. Fold in the lemon curd.

To assemble: Place 12 cake slices, spiral side out, along bottom of trifle bowl. Arrange Arrange peach slices above each cake slice. Add another layer of cake spirals above peaches. Place remaining cake slices in the center of bowl. Spoon the blueberries around the cake slices and peaches. Top the berries with the whipped cream mixture. Add a couple of peach slices to the top along with a sprig of fresh mint as garnish, if desired.

Incredibly Delicious and Simple Desserts For the Novice Cook

Not everybody is a chef and not everyone has a lot of cooking experience. We all have to begin somewhere and gaining confidence by making easy entres is a very good starting point. After that, you can try your hand at appetizers and desserts.

Perhaps you feel that making a three course meal would be too difficult but if you make appetizers, chill them in the refrigerator, then a simple dessert recipe, and chill that in the refrigerator too, you can focus on the main course. Making everything one step at a time is what keeps it easy.

Some families do not eat dessert or rarely eat it and you can get readymade desserts from the grocery store, meaning that dessert making is something that fewer and fewer people attempt nowadays.

Begin with No Bake Desserts for Simplicity

Plain jello is simple to make and you just have to combine the jello powder with hot water, add cold water, mix it well, and let it set. That is absolutely all there is to it.

Once you have mastered basic jello making, you can try adding some pieces fruit of the mixture (not fresh pineapple, kiwi, ginger root or papaya because they contain an enzyme to stop the jello from setting). You might like to try whipping up some cream and serving this with the jello. You can sprinkle chocolate flakes or chopped nuts over the top of your jello confection as well.

Valentine Desserts: Delicious Desserts for Valentine's Day Dinners

Pick a simple but delectable Valentine Day dessert recipe to add the finishing touch to your Valentine dinner. Chocolate is a lovely gift for Valentine's Day, and it's good used to add a note of indulgence for your dessert. Another good choice is succulent fresh fruit, which is always so welcome in winter. Any pink or red fruit is ideal, such as strawberries, raspberries or rhubarb. Tropical fruits are also an excellent choice, and for the simplest dessert of all, you could simply serve a platter of sliced fruits such as juicy mango, halved passion fruits, fresh pineapple chunks and papaya wedges. Add some cubes of chocolate cake, and a scattering of shelled nuts, and you'll have an instant and delectable Valentine's Day dessert.

Here are more ideas for Valentine's Day desserts.

Desserts Food

Make it pink Early forced rhubarb is a lovely shade of fresh pink that looks so pretty in a mousse. Chop 450g (12 oz) fruit and simmer covered for 10 min in a pan with 50ml (4 tbsp) fresh orange juice, 1 cinnamon stick and 25g (5 tsp) caster sugar, until the rhubarb is tender. Remove the lid and cook for another 5 mins until most of the liquid has evaporated. Stir in 1 tbsp redcurrant jelly and leave to cool. Fold the fruit through 150ml (2/3 cup) 0% fat Greek yogurt, spoon into glasses and chill for 2 hr. This makes six individual portions, and keeps for 1-2 days refrigerated. Just add chocolate Prepare a plate of mixed fruit cut into bite-sized pieces. Put 200g (1 ½ cups) dark chocolate in a heatproof bowl and add 50g (1/4 cup) butter, 75ml (1/3 cup) water and 2 tbsp Malibu or brandy. Place over a pan of barely simmering water, so the base of the bowl is just above the surface of the water. Stir occasionally until melted, then stir until smooth. Serve with forks for spearing the fruit and dipping into the chocolate sauce. Celebration sorbet Put 600ml (2 ½ cups) apple and mango juice into a pan with the zest of a lemon and 75g caster sugar. Heat gently until the sugar has dissolved, then bring to the boil, simmer for 1 min, then pour into a bowl to cool. Strain into a container and place in the freezer for about 4 hours. Remove from freezer and whisk well to break up the ice crystals, then freeze until firm. Serve piled into glasses and decorated with mint leaves, with chocolate finger biscuits. Heart-shaped delights Any dessert can become a Valentine dessert, if you add a heart-shaped decoration. Many cookware shops sell heart-shaped moulds and cutters, which you can use to bake cakes and cookies for the day. Or make a heart-stencil, by cutting a heart out of sheet of thin card. Place the card with the heart-shaped hole on top of a cake or pile of pancakes, and dredge with icing sugar. Lift off stencil carefully.

Keep it healthy, by using low fat ingredients and choosing chocolate with a high proportion of cocoa solids, for these Valentine's desserts.

Gluten-Free Desserts That Are Truly Delicious

When it comes to desserts, sometimes gluten-free products come up a little short on flavor. You don't have to settle for less! There are more and more companies creating outstanding gluten-free sweets with lots of flavor, good texture, that are made with excellent ingredients. Here are some of my favorite cookies, chocolates, and mixes that are a must for those who stay on a gluten-free diet.

Sun Flour Baking Company is one of my favorite cookie companies. Based in Sacramento California, their cookies are all vegan, and they have a great selection that are gluten-free. They are made with quality ingredients, often organic ingredients, and are sweetened with fruit juices. They have a wonderful texture and flavor. They have a wide array of flavors such as Pumpkin Spice, Banana Nut, or Lemony Lemon. The shortbread cookie with chocolate chips is my all-time favorite cookie. They have several chocolate flavors that are outstanding. Try the German Chocolate, which has a nice cake texture and just the right balance of chocolate and coconut. If you want a dense chocolate fix, try their Golden Brownie Cookie, a rich chewy cookie filled with crunchy walnuts. For a terrific ginger cookie, I like the cookies made by Ener-G Foods in Seattle Washington. This is a delicious chewy cookie with just the right amount of ginger.

Desserts Food

In the world of chocolates I have finally found a great gluten-free chocolate company. Wei of Chocolate out of Phoenix Arizona is making inspiring chocolates that are organic, fair trade, vegan and gluten-free. They are hand-made chocolates infused with herbs, spices and flower essences. They are spicy and interesting. If you are looking for a unique chocolate, this is it! They make a delightful flavor called 'Daily Love'! The ingredients include ginger, cinnamon, and cayenne, so it's just a little spicy!

Another superior chocolate company is Sjaak's Organic Chocolates in Petaluma California. They are a family run business and make very high quality organic chocolates, support fair trade practices and encourage sustainable agriculture through the use of organic, non-GMO ingredients. I love a socially conscious company! While they don't mark their chocolates as gluten-free, their website indicates that they have a gluten-free environment, and my conversations with them support these claims. They make chocolate bars in dozens of flavors; try the dark chocolate with a caramel center! Their truffles are also fantastic!

For mixes you can't beat products from Bob's Red Mill. They use the highest quality ingredients, usually organic, and have a large selection of delicious mixes that are all gluten-free. The Brownie Mix is an absolute winner! It makes a deep and intense dark chocolate flavor combined with a wonderfully moist cake texture. Mouthwatering!! If you are a cinnamon fan, you should definitely try their Cinnamon Raisin Bread Mix. It makes a memorable and satisfying loaf loaded with plump raisins and infused with cinnamon. They recommend using it sliced and toasted for French toast.

So, there are a few recommended items that will satisfy the sweet tooth. Package these all together and they would also make a great gift to a fellow friend or family member who is gluten intolerant.

Quince is a relative of pears and apples. The trees have grown around the Mediterranean and in Asia for more than four thousand years, making it one of the earliest known fruits. This fruit was discovered by the ancient Greek armies in Iran and Asia and brought to Greece. Today quinces are grown on the Greek island of Crete. Quince is also available today in the United States, the Middle East and in Latin America. Quinces in Western Asia are juicier and softer than those in the United States.

Quince varies in different regions and in cold climates, the fruit is rich gold in color, has a heady fragrance, and has a firm shape. The rind is rough and the flesh is hard. In a warmer climate, however the fruit can be eaten raw and the woolly rind is not there. Quince is often used to make jellies because of its tart and astringent flavor.

Firm, big, yellow quince without any green are the best ones. Handle them carefully because they can bruise. Wrap the fruit in plastic and keep them in the refrigerator for up to a couple of months. Quinces are available from September to January.

Quinces are great for baking, poaching, or stewing, to make dessert recipes. They can also be stewed with meat because the high amount of tannins found in quince helps to tenderize the meat.

Membrillo - A Mexican Specialty

Quince is known as membrillo in Spanish and it is cooked into a firm red paste called dulce de membrillo in Spain, Uruguay, Chile, Argentina, Venezuela, and Mexico. It is served with manchego cheese in sandwiches or on crackers. There is a similar dish in Hungary and also in Portugal.

Recipe for Dulce de Membrillo

You will need:

4 lbs quince 1 vanilla pod 3 tablespoons lemon juice 4 cups white sugar 1 tablespoon melted butter 2 strips lemon peel, 2 inches by 1/2 inch

How to make it:

Wash, peel, core and roughly chop the quince and put the pieces in a big pot. Cover the quince with water, and then add the lemon peel. Split the vanilla pod and add it to the pot. Bring the mixture to a boil, and then reduce it to a simmer.

Cover the pot and cook the mixture for about half an hour or until the quince is tender. Strain the water. Discard the vanilla. Puree the quince in a blender or food processor.

Measure out the quince puree. You will need the same amount of white sugar. It will be about four cups. Put the quince puree back into the pot and add the sugar. Cook over a low to moderate heat, stirring until the sugar dissolves. Add the lemon juice and simmer for about an hour and a half or until the quince paste is deep orange and thick.

Preheat the oven to 125 degrees F. Line an eight by eight inch baking pan with parchment paper, then grease it with melted butter. Pour the quince paste into the prepared pan, and then smooth the top to make it even. Bake for an hour to dry it, and then let it cool. Cut the membrillo into squares and serve it with manchego cheese and bread. Store uneaten membrillo in the refrigerator.

How to Make Delicious Desserts Using Fresh Fruits: Dazzling Peach Trifle and Gelatin Banana Split

The only thing better than fresh fruits are desserts made with those same fresh fruits.  Try these delicious fruit desserts to rave reviews from family and friends.  Gelatin Banana Split Desserts use fresh strawberries, bananas, pineapple along with maraschino cherries.  This is a great summertime dessert, although it is also perfect year-round.  This makes a very pretty dessert for parties, even holidays.  The Peach Trifle is not only a delicious dessert, it makes a gorgeous presentation.  Both of these recipes have eye appeal.

GELATIN BANANA SPLIT DESSERT
1 1/2 cups boiling water
1 pkg (8 serving size) strawberry OR cherry gelatin
2 cups cold water
1 pint vanilla ice cream, softened
frozen whipped topping, thawed
sliced bananas
sliced strawberries
pineapple chunks (if using canned, drain very well)
Chopped pecans
halved maraschino cherries, if desired
In a large bowl, place the dry gelatin and add the boiling water. Stir two minutes to be sure all the gelatin is dissolved. Stir in the cold water. Add the ice cream and stir until smooth. Pour into a serving bowl leaving room for the toppings later. Refrigerate at least 3 hours or until firm. Before serving, top with the fruits. Pile whipped topping in the center and sprinkle with chopped nuts. Top with some halved maraschino cherries, if desired.

Sugar-Free Pecan Pie
For this dessert, you will need to have:
1/3 cup of water
2/3 cup of granular fructose
2 packages of sugar free vanilla pudding – don't use the instant variety
¾ cup evaporated skim milk
2 big eggs
1 pie shell, 9 inch
¼ cup of chopped pecans
½ cup of grape nuts cereal
First, you should preheat your oven to 350 degrees. Then, combine the water and fructose, and simmer them over low heat for 5 minutes. Let them cool.
Mix the dry pudding with the fructose mixture. You can add skim milk and eggs, and blend. Pour the mixture into the pie shell, and sprinkle the top with the Grape Nuts and the pecans. Bake it for 30 minutes.
Old Fashioned Applesauce Cake
For this dessert, you will need the following:
1 cup of flour
1 teaspoon baking powder
½ teaspoon baking soda
2 teaspoons cinnamon
½ teaspoon ginger
½ cup reduced calorie margarine
¼ cup molasses
½ cup egg substitute
1 teaspoon vanilla
1 cup Splenda
1.2 cup unsweetened applesauce
You want to have your oven set at 350 degrees. Then, in a bowl, mix together the cinnamon, baking soda, and ginger with the flour. In another bowl, mix the margarine and molasses with an electric mixer. Add the egg substitute, and the vanilla, and blend on high. Add the rest of the mixture to the bowl, and mix it all together. Then, spread into a pan and bake for 30 minutes.
Sugar Free Key Lime Pie
You can also make a sugar free key lime pie by using Sugar Free Key Lime Pie mixture, mixed with lime juice and water, as well as packets of equal. You can put the mixture into a regular pie crust, and then set the mixture in the refrigerator for several minutes.
